Proatmeal. Hahaha. Oatmeal with a scoop of vanilla protein powder mixed in and fresh fruit on top. My current favorite post-workout snack.
Also, I wrenched my knee running in the snow last week. I think it will be ok if I just have patience and let it rest for a few days. But it's very hard for me to not run, especially knowing how close I am to race day. I've been trying to do other supplemental workouts instead; pilates, walking, cycling, weight training, and yoga.
Mixed international cuisines with a delightful result. Harissa chicken with an Israeli-style tomato and cucumber salad, tabbouleh, and naan. Definitely a fusion of flavors but it was all delicious.
I NEVER eat seafood. I've never liked the taste or texture of any kind of fish, shrimp, oysters, whatever. But on my quest to be just a bit healthier I thought I'd try again and dress up some salmon and pretend it's a cheeseburger. I still didn't love it but I could definitely tell that it's a lighter protein. Not sure if this will actually make it into my regular rotation but I'm glad I tried to branch out a bit.
Less than 2 months until my half marathon! It was a slow-go on today's run but I'm casually blaming that on the ice and snow I had to run through. 🤣🤣 Of course I am so sore now but proud of the work I put in.
Tonight we went classic casserole with a pretty little side salad.
Salad: baby spinach, arugula, strawberries, walnuts, & blue cheese with balsamic vinegarette. A+, 10/10
Casserole: Creamy chicken, rice, broccoli and cheddar. Recipe found here. 8/10. Would make again but with a little less milk and a little more seasoning.
Happy New Year! The first dish I cooked for the year is southwest style stuffed peppers - filled with ground turkey, black beans, onions, more bell pepper, tomato, and cheese. Very good all around. This is one of my favorite go-to recipes.
All I wanted for Christmas was a sandwich. I love sandwiches. And this one was perfect. Italian-style: salami, prosciutto, provolone, lettuce, tomato, banana peppers, black olives, balsamic vinegar and a little oregano. A lovely holiday treat.
Changed a couple ingredients around from the Greek chicken wraps from the other day to make a burrito. Swapped out feta cheese for a Mexican blend and Greek dressing for salsa, voila! A whole new flavor profile.
Greek chicken wrap. Simple ingredients but so so good. A+, would make again.
Lemon chicken with potatoes, peppers, onion & capers. Garlic & feta green beans. It doesn't look like much but it was delicious all around.
Not my best. It was truly just a "throw together ingredients I already have in the house" kinda meal. Pan-cooked chicken with beef broth, red wine vinegar, garlic, mushrooms, and peppers; oven roasted potatoes and onions. It was good, not great. The chicken could have cooked a bit longer, but it will heat up nicely tomorrow.
Aphrodite: my schedule is very busy! Eating, sleeping, being hot, holding my cats, cyber bullying! See very busy.
Made a cute little stir fry tonight. It came out good, if not a tad too sweet. Will toss the leftovers with a splash of soy sauce. It will be perfect for lunch tomorrow.
The way I just casually ran 6 miles like it was nothing. 💅 obviously I'm still a slow poke but the way I've gained stamina is honestly astounding.
