SESAME! This is Tartine Country Sesame Sourdough. I felt I was getting the hang of baking sourdough bread, so I wanted to try a new flavor. I bought some unhulled black sesame seeds a couple weeks ago in anticipation for this. I followed Maurizio’s recipe from the Perfect Loaf, which I think is essentially the Tartine Country Sesame Sourdough recipe. Got up early on Saturday morning and spent the next 10 hours at work on this (and baking loaves from the previous day). It was a success! I think this bread tastes incredible and I can’t wait to share with others.
The results of the last couple weekends of sourdough bread bakes. I feel I’m starting to get the hang of this sourdough thing. It’s a long process, but very rewarding – and tasty! That first cut into the bread is always exciting, and the aroma inside the loaves always makes me smile.
The last photos are a before and after shot. The new scoring patterns were inspired by watching dozens of scoring videos on Instagram. They can be pretty addictive.
My first sourdough bread bake in about a year. Both loaves came out so much better than I ever expected. Earlier this year I got back into baking yeasted breads, which are a lot easier and quicker to create than the sourdough above.
About 30 loaves in, I felt like I was starting to regress a bit here and there. I was overkneading my dough, to the point that it was pretty much ruined. Very disheartening. I also had inconsistent oven spring.
One day on IG, I stumbled upon this bread baking class opportunity. After looking into the organization - the Artisan Grain Collaborative - I got my ticket and prepped to attend. From that class I received some sourdough starter from the baker Alex Roman, head baker at Somerset Chicago.
Following the in-depth explainer recipe from Maurizio at the Perfect Loaf, I had my breakthrough. Lots of work goes into this over several days, including twice-daily feedings to the starter. In the end, the taste and appearance were spot on and I was elated. Hoping this is just the beginning.
