Starting my morning with San Matteo Farm's Strawberry and Mandarin Jam on homemade Dill and Caraway Bread. You taste the strawberries first but the mandarin flavor lingers on. Happy New Year! 🎉 🍾 while I'm still not done with my 'Top 17 of 17,' I want to post my favorite recipe of the year. 💚 It's an adaptation of my mom's simple Fried Zucchini pasta. I pan-fry zucchini with whole garlic cloves while the pasta cooks. When the pasta is 1 minute from being done, I take out some cooking water and set it aside before draining the pasta. Add the pasta, Nooch, chopped Basil, red pepper flakes, Chia Seeds and cooking water to the zucchini pan and cook for another minute until the pasta finishes cooking and the water evaporates.
