It's been quite a while since I've made one of these videos - I got a new job, moved across the country, yadda.. yadda... yadda. Anyway, here's a fresh recipe for delicious quinoa stuffed bell peppers that's pretty simple.Â
What you'll need:
Olive oil
5-6 cloves garlic, finely chopped
1/2 red onion, chopped
2 yellow squash, quartered and chopped
2 Â tomatoes, chopped
2 handfuls baby carrots, chopped
2-3 big handfuls of spinach
2 cups quinoa, thoroughly rinsed
4-6 red bell peppers, hollowed out
 What you do:
Heat olive oil in a large pan and toss in half of your garlic and onion. Sauté onion and garlic for a couple minutes and  add in quinoa. Lightly brown quinoa for 2-3 minutes. Add quinoa to 4 cups boiling water, cover and reduce to a simmer. Cook for 15-20 minutes.
While the quinoa is cooking, heat olive oil in a large pan. Add the rest of your onion and garlic and sauté for a few minutes. Then, add your baby carrots and squash and continue to cook until carrots become slightly soft. Add in tomatoes and spinach and cook until spinach is completely wilted. Once quinoa is done cooking, add it to the pan for about 3-5 minutes, stirring frequently.
Take your mix, and press it into hollowed out bell peppers. Put them in the oven at 350 for about 20 minutes.
This recipe will make between 4 and 6 pepper depending on size and how tightly you pack them. You can also make it as an appetizer with small sweet peppers.
