These gingerbread scones are the perfect treat for a cozy morning or afternoon tea. They are tender, spicy, and full of warm gingerbread flavor. Enjoy them with a cup of hot tea or coffee.
Ingredients: 1 1/2 cups all-purpose flour. 1/3 cup granulated sugar. 1 1/2 teaspoons ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/2 teaspoon baking soda. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup 1 stick unsalted butter, cold and cut into small cubes. 1/4 cup molasses. 1/4 cup milk. 1 large egg. 1 teaspoon vanilla extract. Optional: Powdered sugar for dusting.
Instructions: Warm your oven up to 375F 190C and put parchment paper on a baking sheet. Use a whisk to mix the flour, sugar, ground ginger, cinnamon, cloves, nutmeg, baking soda, baking powder, and salt in a large bowl. Add the cold cubed butter to the dry ingredients. Cut the butter into the flour mixture with a pastry cutter or your fingers until it looks like big crumbs. To make the molasses, milk, egg, and vanilla extract, use a different bowl and whisk them together. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Be careful not to mix too much. Place the dough on a floured surface and knead it a few times to bring it all together. Make a circle out of the dough that is 1 inch thick. To make scones out of the dough, use a round cookie cutter or a glass. Don't cram too many on the baking sheet; leave some space between each one. After the oven is hot, bake the scones for 12 to 15 minutes, or until they are golden brown and fully cooked. Set the scones on a wire rack to cool down. You can sprinkle powdered sugar on top before serving if you want to. Have fun with your soft gingerbread scones!
