It's Hard to Be Sunny on a Gloomy Day
It was about 85 degrees in Philadelphia yesterday, and so my parents officially opened their pool today - only to be bombarded with 50 degree temperatures and lots and lots of rain.
Is it just me or is it really easy to be sucked into a gloomy mood on a gloomy day? I felt like Eeyore all afternoon - all sad and tired for no reason.
To try and get out of the funk I decided to try making something new. I've been wanting to make cashew cheese ever since I first tried it at one of my favorite restaurants in LA, Real Food Daily. I found this recipe from Redhead Recipes and gave it a whirl, tweaking it only a little by adding a few swirls of agave nectar to make it a bit sweeter.
It's not the most appetizing photo, but it tasted really good!
After I made the "cheese" I had to figure out what I was going to put it on, so I improvised and made an eggwhite/tofu breakfast wrap, and drizzled the cashew cheese on top of it.
It was damnnnn good! I'm not lactose intolerant or vegan, but if you are either of those things, cashew cheese is an awesome alternative to regular cheese!
I also decided to pamper myself a teeny bit today to cheer myself up. A year or so ago I was talking to a dermatologist for a beauty story we were doing, and she told me that the #1 thing you can put on your skin is honey. She said honey is so great for your skin that she would rather use honey on her clients than any other product - and she did! Since then, every once in a while I make a homemade face mask with honey and a bit of white sugar to create a really simple exfoliating face mask.
It may seem crazy but I swear it's amazing! All you do is mix some honey and white sugar together so that it becomes a liquid-like consistency, spread it over your face and wait about 20 minutes before washing it off.
After you wash it off you'll feel like a million bucks, I promise!
