homegrown apple crumble
In my garden I have a huge, gorgeous apple tree and every year around this time I pick the apples and use them to make crumbles and cakes and pies. Here’s the recipe I use to make my crumble:
You’ll need to preheat your oven to 190°C/170°C fan/gas mark 5.
First, pick 3 medium-large apples. These apples are cooking apples; if you don’t have access to an apple tree, cooking apples are fairly easy to find in any local shop.
Next, wash, peel and slice the apples; each piece should be about 1cm thick. It’s okay if the pieces vary in thickness a little bit but the closer in size they are, the more likely your crumble will be thoroughly cooked. Larger pieces may take longer to cook and so might still be a bit crunchy.
Then, toss the apple slices with approximately 2 tablespoons of sugar and 2 teaspoons of ground cinnamon. Add more sugar and cinnamon as needed (though be careful not to overpower it!) and ensure that they are evenly dispersed so all the apple pieces are full of flavour.
Put the apple slices in an oven-safe dish at least 5cm deep and gently flatten with your hand to prevent too much crumble falling through.
Now, measure 175g flour, 110g sugar and 110g cold butter into a mixing bowl. Rub the mixture together between your fingers until it looks like breadcrumbs. Make sure to shake the bowl so any big bits you’ve missed come to the top; rub these in too.
Pour the crumb mix over the apples in the dish and use your hands or the back of a fork to gently even it out. Sprinkle a tablespoon of demerara sugar (or whichever sugar you prefer) evenly over the top of the crumble for added sweetness if you wish.
Place the crumble in the oven for 35-40 minutes, or until the top is golden and the apples feel soft when you insert a small, sharp knife. Leave to cool for 5-10 minutes before serving.
This crumble goes perfect with custard or double cream!
