So does Illya say "I like my women strong" (plural) or "I like my woman strong" (singular). I've seen it written both ways in gifs/edits/docs. Does Illya like strong women or is Gaby HIS woman and he likes that she is strong?

I’ve seen it both ways as well, and I hear him say, “I like my woman strong.” To me, he’s still referring to their cover identities being as authentic as possible (“It’s better for the mission.” — “For the purpose of the mission, I am [your fiancé]!”); it’s really important to him! (“Your fiancé would have gone out first thing in the morning to replace it.”) He’s, in his mind, saying that as his cover, her fiancé. Which is why earlier, when he says “my woman would never wear anything like that” he’s also saying that as his character (”Why did he call me ‘his woman’?” “Because I am now your fiancé”). He’s playing the part  (“Soviet architect traveling to Rome would never dress his woman in clothes you try to put her in.”)

He isn’t fooling anyone though—that’s not just how his character feels—that’s how he feels about her. He would pick a strong woman, he would dress her fashionably, he would fight robbers to protect her, he would make sure if her jewelry was stolen that he would replace it with something better (it wasn’t a real black pearl, but a black pearl ring is rare and far more valuable than a diamond ring. It was a statement piece), he would make sure men trying to steal her away from him would know that he is her fiancé (“It’s not happening.”)

So in his mind, even if he’s fooling himself and making it about the mission, Gaby is his woman.
