Request: Skyrim Jazbay Crostata
An anonymous requester asked for something from Skyrim, and I’ve been waiting for an opportunity to try some of the crostata’s mentioned in the game (I also have plans for Sweet Rolls but those are a little ways off~).
This is actually a fairly short recipe- you may notice the only ingredients for the filling is grapes and some sugar sprinkled on top. Concord grapes bake amazingly well by themselves, and I was lucky enough to find a hybrid species that was seedless. If you can only find seeded concord grapes, you can easily pinch the skin off the grape and strain the insides through a strainer to remove the seeds (don’t forget to add the skins back in to the mix later!)
½ cup (1 stick) Unsalted Butter, cold
3 cups Concord Grapes, seedless
Mint and Rosemary for garnish
Prep Time: 20 - 30 min. | Total Bake Time: 20 - 30 min.
Makes: 1 crostata, serving 4 to 6 people
Step 1.) Cut the cold butter into the flour, sugar, and salt until you get pea-sized clumps (You can use a food processor or your hands to mix everything together.
Step 2.) Slowly add the water and mix until you get a doughy consistency (add more flour if it becomes too sticky). Allow to chill in the refrigerator for at least 30 min.
Step 3.) Preheat the oven to 375°F. Roll the dough out to about 1/4′ thickness in a circle. Place the dough on a baking sheet lined with parchment paper or lightly greased foil.
Step 4.) Wash and pluck the grapes (make sure to skin and strain them if they are seeded, as I described above.) Arrange half of them in a small pile in the middle of the dough. Use the rest of the grapes to fill in under the dough as your fold the ends of the dough over (you don’t want all crust and no grapes!
Step 5.) Brush the crush with water and sprinkle the 1 tbsp. of sugar across the crust and grapes. Bake for 20 - 30 min. or until the crust is golden. Allow to cool for 5 min., garnish with mint or rosemary, and enjoy!
It’s easy to forget how sweet grapes are, they really only need a nice crust to compliment them and you have a super delicious dessert on your hands! 10/10 will definitely make again!
