I think I’ve told this story before, but I read an article a long time ago that they asked children who watched this show why they loved it. They expected answers to be about how they like the weird, slightly creepy stuff. But no, most of the kids answered that it was because the Mommy and Daddy loved each other so much.

The average price for chicken breast is around $3.20/lb
One pound of rice is maybe a dollar
Fresh broccoli is typically 2 bucks per pound
You can buy a 5-pound bag of russet potatoes for 3 dollars (about 60 cents/lb)
12 count eggs are around a dollar
You’re looking at maybe $10 without tax for more than one lunch meal, you could probably get at least 3 meals out of the list above (about $3.33 for each meal). That’s far from expensive.
Meat is the most expensive part of these meals and can be exchanged for cheaper meats.
Things that you also need to make all of these things:
Reliable access to a stocked kitchen full of utensils.
Reliable access to refrigeration.
The ability to buy fresh groceries every week. (Please google “Food Deserts”)
Either cooking skills or the necessary extra wiggle room in your budget to Experiment with all these recipes until you can cook them reliably.
Several extra hours a week for batch meal prep and dishes.
You are Absolutely Right that it’s cheaper in the long run to do these things. Just like it’s cheaper to buy Nice New Boots instead of crappy ones that wear out. Just like it’s way less expensive in the long run to do preventative maintenance on your car than to just Hope it doesn’t break down when you need it.
I’ll you’re in a position to make these kinds of decisions in your life, that’s good for you. Offering tips and suggestions on ways other people can do them too is fine. Calling people lazy for not doing it is a huge, sweeping generalization about people whose lifestyles and circumstances you know nothing about, and it’s super presumptive and rude.
This also ties in to obesity. One thing people don’t realize about the South and the poor in general is that we have to eat more filling foods. If we do make meals then those meals are going to get us full and stick to our bones. Cheaper meats, starches, canned veggies, grits (the ultimate filler upper), etc are what we have access to. Eating healthy is not just a lifestyle, it’s a luxury. The well off can afford to skim down their diets because they have that safety net of stability. The poor and even the just the bottom lined middle class? There’s just the tightrope.
Btw, “organic” is nothing more than another expensive label. All the fruits and veggies come from the same place, onto the same truck and to the same factory where they’re separated. There’s nothing extra meta about the organic shit out there other than that it’s exploiting the well off. Something to keep in mind when you’re also trying to budget healthy food.
We may not live in the wild anymore but this is still a game of survival.
