(I’m being told off for using a kitchen aid to make pizza dough but then it started smoking because apparently you “can’t use the stand mixer (A THOUSAND DOLARS) except in TWO KINUTE INCREMENTS and at NO MORE and NO LESS than speed 2, for NO MORE than a TOTAL of 6-8 minutes”. But the thing is the recipe said to knead for that long!!!! I didn’t know- how was Iiiiiiiii to know that a stand mixer means the knead time goes down to 2 minutes that sounds like a conspiracy to me just saying…???)

One thing I haven’t- TWO things I haven’t been able to wrap my head around when it comes to the food bros:

1) how does food temperature go UP when you remove it from a heat source. I don’t get it. I struggle so badly with this. Where is the heat coming from? I didn’t do super advanced math or anything in school but I do remember that thermodynamics heat transfer equation thingy where the temperatures of ‘a thing’ in ‘an environment’ will equilibrium or something.

2) they say beef, or something - whatever meat, should be warm to the touch that’s how you know it’s 30 something degrees (c) and then it’ll come up to temp for a perfect medium rare. Sounds amazing. I don’t know if the temperature they say is accurate but I do love a medium. “OR” they continue, “you can use a thermometer”. But now... At what temperature does bacteria like, die? “You don’t have to worry about that because no bacteria is inside the meat, it’s sealed” but you just shoved a thermometer into it.

When you’ve been cooking for long enough, you stop making recipes and start making “shit in a skillet” and “whatever soup”

The truth is, cooking is just a basic skill set, and once you have that skill set down you can make almost anything. It's like drawing/painting, once you learn what you're doing, you can do anything.

Do Not Apply This Thinking To Baking.

in all seriousness, if you're craving ice cream, it's likely that your body needs fat and carbs. If ice cream isn't an option for whatever reason, you can try to feed yourself something else with a significant amount of fat and/or carbs. You may also be dehydrated if you're craving sweets.

That said, sometimes your body and brain do genuinely just need a pick me up.

The more frequently you practice intuitive eating like this, the better you'll get at figuring out what it is that your body is asking for.

Also, a great trick is to take a look at what you're craving, note the nutritional contents (fat, carbs, protein, plant matter/fiber) and try and figure out what else sounds tasty for your particular craving. This can give you more data points to go off of. For instance, if you're craving ice cream, but a sweet roll sounds just as good, it's probably carbs your body is asking you for. That said, if you're craving ice cream and a sweet roll doesn't sound good at all BUT a bagel with strawberry cream cheese or avocado toast DOES sound good, you know it's fat you're needing.

If all you're craving is ice cream and nothing else sounds worth the effort, you may just need a low effort mood boost, which is also totally valid! This can also help you even if you can't have ice cream, because now that you know what your body actually wants, you know there are more ways to fulfill that order than the way it asked you to!

To throw on to that. The best advice I received was to look at food in all its glory. Try to avoid breaking it down into macro and micronutrients. What even is a carb? Is it a rice? Is it a tub of yoghurt?

Instead, pay loving attention to the 🥰food matrix😍.
