One Blog a week....
So I am setting myself a challenge. I haven't blogged for a while but I need to up my game. So I will be writing a blog a week for 30 weeks. it is my own challenge and as yet I am undecided -should I theme my blogs, or just go for the diary style? I have plenty of things to write about, my teaching experiences at University of Huddersfield, being part of the WI, leaving my roller Derby Team and stopping playing after 5 years, my kids (always tentative about putting details of their exploits out for public consumption, that is why they are down the list), my PhD (a huge struggle and why I need to write more), being less than a year away from turning 40, what inspires me, my sewing projects, T-shirts...so lots of ideas.
Last night's dinner
Chimichanga is an odd word, it is the spanish equivalent of “thingamajig”, however in the UK (and elsewhere) it is best know as the word for a deep fried burrito. A wrap or tortilla filled with a range of meat or fish. Last night we had a home-made version of this dish. Ours was filled with shredded beef and caramelised onion, parcelled up in a wrap; instead of deep frying we brush with oil and bake in the oven. They are delicious and a real family favourite.
We served the burritos with small roasted potatoes, skins still on so they go extra crispy, these are roasted with a very light coating of olive oil. Buritos need some sides and in our family they are always guacamole, sour cream and chive and a tomato salsa. To add some sort of healthy element to this indulgent feast we added spinach and tomato salad.
