Got home from work after an 11 hour day, made myself a lovely, healthy dinner, and decided to get a jump on dinner for tomorrow. So, I did the obvious thing and sliced up some shallots and spatchcocked a chicken. (It cooks faster that way.) A little white wine, some roasted garlic-infused oil, and it seems acceptable. Plus, I made a delightful stock from the bones and sternum, and made the liver for the cat.
