Life Lately 2023
Hey Tumblr, okay I know it took me about a year to post here⌠again. I am surprised that itâs already mid-2023. After surviving from COVID-19 on January 2022, I realized that I should enjoy life more. We surpassed the face shields era, the face mask season and even the countless swab tests. What Iâm trying to say is I am grateful that Iâm still breathing and doing the things that I like, some plans screwed up and there a lot of setbacks but hey, Iâm just thankful to be alive. The rest of 2023 will be about self-love, getting back on track, improvement, doing the stuff that I really love. I hope youâre back on your âthingâ too or youâre reaching your goals somehow.

âChristmas Oreo Balls: Cookies and Cream Truffles - 4 Waysâ
INGREDIENTS: 28 pieces (266 grams) Oreo "Original" Cookies 1 cup (120 grams) Cream Cheese, room temperature *Coating and decorating options: 1 cup (180 grams) baking chocolates or chocolate buttons (white, dark, milk chocolate, or semi-sweet) Sprinkles: Christmas colors or theme Powdered Sugar Cocoa Powder Desiccated Coconut Yield: Makes 20 Truffles
What you need: 1. To crush the sandwich cookies, you have 3 options: Food processor Rolling pin and resealable food bag/zip-top bag Hand/stand mixer (if you have one, use a flat or paddle attachment) 2. For mixing the cookie balls: Wooden spoon or spatula Mixing bowl 3. For chilling the cookie balls/truffles: Baking tray Baking paper or parchment Refrigerator 4. Scooper or 15 mL measuring spoon/1 Tablespoon 5. For coating and decorating: spoon and fork or dipping tools for chocolates

âHow to Make Orange Chicken From Scratchâ
A flavorful dish composed of crispy Chicken fillet with Orange glaze. Imagine a combination of sweet, savory and tangy taste.
Batter for the Chicken Tenders: ½ kg (1 lb.) boneless Chicken thighs or breast fillet ½ cup Cornstarch 1 ½ cup All Purpose Flour ½ Tablespoon Salt ½ teaspoon Garlic Powder Pepper, optional according to your preference. 1 Egg 1 cup Water 2 Tablespoons Canola Oil or any neutral oil 3 cups oil for frying
How to Cook Chicken Tenders or Fillet/Chinese Chicken Fingers: 1. Slice chicken into cubes for the Orange Chicken and bigger chunks for the Chicken Tenders. Set aside. 2. In a medium mixing bowl: combine the flour, cornstarch, salt, garlic powder. Mix until well-incorporated. 3. Add the egg, pour the water, and oil until it reaches the consistency of pancake batter. Gradually add water until the you reach the right texture. 4. Add the chicken to the batter, stir well. Marinade and refrigerate at least 30 minutes. 5. Heat oil in a wok or heavy bottom frying pan. 6. Fry for 5 to 6 minutes until both sides are lightly golden brown. 7. Remove the chicken from the pan. Drain the excess oil. Transfer to a paper towel-lined plate.
Sauce for the ORANGE CHICKEN: 1 Tablespoon cooking oil Ÿ teaspoon Red Pepper Flakes/Chili flakes 1 Tablespoon Garlic, minced (about 3 cloves, adjust according to your preference) 1 small Ginger, minced (equivalent to ½ teaspoon) Ÿ cup White Sugar Ÿ cup Brown Sugar Ÿ cup Orange Juice Ÿ cup White Vinegar 2 Tablespoons Soy Sauce 2 Tablespoons Water 2 Tablespoons Cornstarch 1 Teaspoon Sesame Oil
STEPS TO MAKE THE ORANGE CHICKEN: 1. Set a pan on medium- high heat. then add the cooking oil. 2. Once the oil is hot, add the red pepper flakes, garlic, and ginger. Cook for 3 to 5 minutes or until fragrant. Stir constantly. 3. Put the white sugar and brown sugar, and stir well to combine. 4. Pour in the orange juice and allow the sugars to begin to dissolve in the liquid. Texture should start to caramelize. 5. Add in the vinegar and soy sauce, continue stirring. 6. Make a slurry: Mix the cornstarch and water together. Add to the pan and stir. 7. Let the sauce cook until the consitency is thick like maple syrup. Stir until the right consistency is achieved. 8. Add the sesame oil. 9. Lower the heat. Toss in the fried chicken/Chicken Tenders. 10. Gently stir until the chicken pieces are completely coated with the sauce. Donât over mix to maintain the crunchiness. 11. Transfer to a serving dish or plate. Best served hot. *Optional: top with sesame seeds, spring onions, orange zest.

Ingredients: (Servings 3-4) *500 grams chicken breast fillet *Marinade and coating for the chicken: 1/2 teaspoon Salt 1/2 teaspoon Pepper 1/2 teaspoon Garlic Powder 1 Tablespoon Oyster Sauce 1 piece Egg 2 Tablespoon All Purpose Flour
For the Sauce: 1 cup Water 1/4 cup Lemon Juice 1/4 cup Honey 1 teaspoon butter 2 Tablespoon Cornstarch
*Garnish: Lemon, sliced Sesame Seeds Onion Springs or Leek
