Cauliflower Tikka Masala is a delicious way to make the traditional Indian dish that is also good for people who are on a low-carb diet.
Ingredients: 1 medium head cauliflower, cut into florets. 1 cup full-fat coconut milk. 1/2 cup tomato puree. 2 tablespoons ghee or coconut oil. 1 tablespoon grated ginger. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Salt to taste. Fresh cilantro, chopped for garnish.
Instructions: Preheat oven to 400F 200C. In a bowl, mix coconut milk, tomato puree, grated ginger, minced garlic, ground cumin, ground coriander, turmeric, paprika, cayenne pepper, and salt. Place cauliflower florets on a baking sheet and coat them with half of the prepared sauce. Roast cauliflower in the preheated oven for 20-25 minutes, or until tender and lightly browned. In a skillet, heat ghee or coconut oil over medium heat. Add the remaining sauce to the skillet and cook for 2-3 minutes. Add roasted cauliflower to the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld. Garnish with chopped fresh cilantro before serving. Serve hot and enjoy!
