That could be in a simple manner (like keeping himself from the cold) or for more serious topics, such as feeling like he has to "protect himself" from other people, or even the blood on his own hands

In short, I think his gloves make him feel safe, and so taking them off is a sign of trust.

He's eating a nice meal around friends? He gets to sit down and enjoy it? He feels comfortable and happy? Gloves off.

He's somewhere crowded or unsafe? He has to eat quickly? Had a stressful day? Gloves on.
