I made a whole bunch of fresh spring rolls! 😋 Just wrap some julienned cucumbers, carrots, red bell peppers, seaweed, and baked tofu in rice paper. The dipping sauce is made by squeezing 1/2 a lemon into about 1/4 cup peanut butter, 1 tsp sesame oil, 2 tsp liquid aminos, plus sriracha and coco sugar to taste. Then just add some hot water to thin the mixture. Go ahead and try it out! 👌 #eatwell #betterstartstoday

My kind of instant noodles! 🍝Zucchini noodles (#zoodles) are my favorite alternative to pasta. It's rainy season in the PH and zucchinis are pricey so whenever there's a sale, I hoard as much as I can! You can just use a julienne peeler to make the noodles but if you're clumsy like me, you might want to put a spiralizer on your Christmas wishlist! I get nicks on my fingers similar to paper cuts - the nastiest little things. 😩 I usually eat it raw with some homemade pesto and nooch like in the photo or with some marinara sauce and lentil meatballs. Look, I made black bean sliders! 🍔😍 I tend to be very picky with my veggie burgers so it’s about time I made my own.
Black Bean Sliders 1 tbsp virgin coconut oil 1 small red onion, chopped 3 cloves garlic, minced Flax egg (3 tbsp ground flax seeds whisked with 1/3 cup warm water) 1 can organic black beans (no salt added), rinsed and mashed 1 medium carrot, shredded A handful of parsley, chopped 1/2 cup raw sunflower seeds 2 tbsp Bragg's Liquid Aminos 1 tsp chili flakes 2 tsp Bragg's Sea Kelp Delight Seasoning 1 cup gluten free oat flour (In a food processor or high speed blender, pulse 1 cup gluten free old-fashioned oats until it becomes a course meal) 2 tbsp gluten free all-purpose flour
Procedure: Preheat oven to 180C. Saute onion and garlic in virgin coconut oil until soft. Transfer into a mixing bowl. Combine sauted onion and garlic with flax egg, mashed black beans, shredded carrot, parsley, sunflower seeds, liquid aminos, chili flakes, seasoning, oat flour, and all-purpose flour. I find it best to use both (clean) hands to mix everything well. If you put your back into it, it also becomes a nice little workout! Shape into patties and place on a baking sheet. Bake for 15 minutes on each side until golden.
I had it sandwiched in some nice, juicy tomatoes but it’s also good enough on its own. With some carrot sticks and hummus on the side, I got myself a happy meal! 😋
PB&J oatmeal: gluten free oats, blueberries, homemade raspberry chia jam (recipe below), cacao nibs, and white chocolate peanut butter 😍
Raspberry Chia Jam Raspberries (about 1 1/2 cups), thawed and drained if frozen 3 tbsp chia seeds 2 tbsp maple syrup (or 1/2 tsp stevia) 1/2 wedge of lemon pinch of sea salt
Procedure: In a small bowl, cover chia seeds with warm water and soak until it forms into a gel (about 5 minutes). Blend together raspebrries, sweetener, lemon juice, and sea salt. Pour in chia gel and blend until thick and jam-like. Store in an airtight container and keep refrigerated. Eat with oatmeal (as above), toast, or by the spoonful!
