These chocolate cupcakes with fresh mint buttercream are a delightful treat for any occasion. The rich and moist chocolate cupcakes are paired perfectly with the refreshing taste of the fresh mint buttercream. They are a crowd-pleaser and ideal for mint chocolate lovers!
Ingredients: 1 3/4 cups all-purpose flour. 1 1/2 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1 1/2 tsp baking soda. 1 tsp salt. 2 large eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 tsp pure vanilla extract. 1 cup boiling water. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 1/4 cup fresh mint leaves, finely chopped. 1-2 tbsp heavy cream. Green food coloring optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Add the cocoa powder, baking powder, baking soda, and salt to a large bowl. Use a sieve to mix the ingredients together. In a separate bowl, mix the eggs, buttermilk, oil, and vanilla extract. Mix everything together well. Add the hot water and mix the batter well until it is smooth. It is going to be thin, but that's okay. The batter should be about two thirds of the way up each cupcake liner. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Turn off the oven and let the cupcakes cool in the pan for a few minutes. Then, move them to a wire rack to cool completely. Get the fresh mint buttercream ready while the cupcakes cool. Put the softened butter in a bowl and beat it until it's smooth. Add the powdered sugar and chopped fresh mint leaves one at a time. To get the frosting to the right consistency, add 1-2 tablespoons of heavy cream if it's too thick. You can add a few drops of green food coloring to the frosting and mix it until it is all the same color. Once the cupcakes are cool enough to handle, use a butter knife or a piping bag to frost them with the fresh mint buttercream. If you want, you can decorate the cupcakes with more mint leaves or chocolate shavings. Serve and have fun!
