Ingredients: 1 lb white fish fillets. 1 cup all-purpose flour. 1 cup beer light beer works well. 1 tsp baking powder. 1/2 tsp salt. 1/2 tsp paprika. 1/4 tsp cayenne pepper. 1 cup shredded cabbage. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped cilantro. 1/4 cup sour cream. 2 tbsp mayonnaise. 1 lime, juiced. 8 small corn tortillas. Vegetable oil for frying. Salt and pepper to taste.
Instructions: In a mixing bowl, combine flour, baking powder, salt, paprika, and cayenne pepper. Slowly add the beer and whisk until the batter is smooth. Let it rest for 10-15 minutes. Heat vegetable oil in a deep pan or fryer to 350F 175C. Dip each fish fillet into the beer batter, allowing excess to drip off, then carefully place it in the hot oil. Fry the fish until it's golden brown and crispy, about 4-5 minutes per side. Drain on paper towels and season with salt and pepper. In a small bowl, mix together sour cream, mayonnaise, and lime juice to create a sauce. To assemble the tacos, warm the corn tortillas and place a piece of beer-battered fish on each one.
