Cassava flour is used instead of wheat flour in this recipe to make the classic beer-battered halibut gluten-free. The batter makes a tasty, crunchy outside while keeping the fish soft and juicy on the inside.
Ingredients: 1 lb halibut fillets, cut into strips. 1 cup cassava flour. 1 cup gluten-free beer. 1 teaspoon garlic powder. 1 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Oil for frying.
Instructions: Put garlic powder, paprika, salt, and black pepper in a bowl and mix them together. As you stir, slowly pour in the gluten-free beer until you have a smooth batter. In a deep fryer or large skillet, heat the oil to 375F 190C. Spread the batter out over the halibut strips as you dip them in it. Put the halibut carefully into the hot oil and fry for three to four minutes on each side, until it is golden brown and crispy. Take the halibut out of the oil and let it drain on paper towels. Warm it up and dip it in your favorite gluten-free sauce.
