This year Essie would have been 109 years young she was a great cook, she had great faith, a beautiful smile, didn't take no mess, and she loved Pepsi !! This Man was the first brother I met at @theculinaryinstituteofamerica He showed me the ropes and introduced me to seafood in Fish Kitchen as he was the Fellow (Sous Chef) who the Chef instructor valued and confided in to teach new incoming students different fish filleting techniques and cooking applications. My restaurant turns six this year if you don’t know operating any business for six years is huge. That being said as I reflect nothing can really prepare you emotionally, physically, and mentally, when you decide to become a entrepreneur. There are a lot emotions and feelings that you feel when you take that leap. If you don’t know some of them are loneliness, accomplished, proud, nervous, scared, happy, worried, stressed. But what I noticed that remained constant was my passion for hospitality and cooking because no matter how hard the road gets and trust me the road will get hard. My passion for this thing called hospitality keeps me in line and of course the love and support of my partner @babygirlrn who really encourages me and reminds me of what we have built together and what I have done helps me to stay the course!!
