I tried these delicacies for the first time only very recently and I must admit that I have missed out a lot. I always cooked and had the marinated ones sold in supermarkets but that was all. They seemed beautiful to me but not tempting enough to buy and try the fresh ones. What changed and made me buy them at last? I am a strong believer that we have to give every food a chance in our life and I believe that was the day for me when artichokes needed to be given that chance, the one and only chance. One word to define the experience of having tried artichokes: fascinating to the point where I have felt such a strong impulse to be writing about them here. My husband’s yesterday braised short beef ribs were such a hit! I made my parmesan pistachio polenta that went so well with the ribs but mashed potatoes are a beautiful pairing as well. Brown ribs on all sides first, remove from heat and set aside. Sautee onions, carrots, garlic, red pepper and herbs first; cook them in tomato sauce and some beef stock (red wine will do as well) to combine all flavours. I am currently surrounded by people who are on a plant-based diet which I find very inspiring and very motivating. Ready to try some delicious pretty fresh cherry almond cakes this weekend? This is my second favourite cherry cake, beside cherry clafoutis, that I love making during the summer when cherries are in season. When not in season, I use any berries and they turn out equally delicious. My son loves them topped with chocolate and I cannot blame him. When I ask Stefan what he wants for lunch or dinner, I get the same answers all the time: pizza, burger and chicken with fries. Once I have one of the three options around and some dessert to go with it, he is a happy boy! And today was no different. When in rush, and today has been one of those days, I buy fresh pizza dough from the pizza/bread section of a supermarket and half of the work is already done. Then, for toppings I add olive oil, tomato sauce, ham, mushrooms, olives, red pepper, cheddar and mozzarella and some basil when the pizza is ready. LINGUINE WITH CLAMS AND WHITE WINE Making fresh pasta is a ritual in our family now and my husband deserves all the credit for it. He loves it, he is passionate about it, he is very technical about it and the end result is always perfection. If I mention that I am going to use some dry pasta for a certain dish, he is already setting his pasta machine and goes into action, as fresh pasta is always more rewarding than the commercial one. It could take him 40 minutes for fresh pasta that we use for our chicken soups or for this delightful linguine dish or it could take him several hours if we are making ravioli. And when I say we, it is the royal we: he does most of the job and I am just the humble apprentice that follows his direction and helps, as needed. I consider myself lucky to have this special apprentice role while he is in the spot light, having the lead role.
