Healthy Whole Wheat Banana Chocolate Chip Muffins
Ingredients:
1 1/2 cups whole wheat pastry flour
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 heaping cup mashed ripe banana (about 2-3 bananas)
1/3 cup honey
1/3 cup nonfat plain greek yogurt
1 tablespoon olive oil
1 1/2 teaspoons vanilla
2 1/2 tablespoons unsweetened vanilla almond milk
1 egg
1 egg white
2/3 cup chocolate chips
Directions:
Preheat oven to 325.
Stir dry ingredients.
In a separate bowl, whisk together all wet ingredients except for eggs.
When well combined, add eggs and whisk again.
Slowly and gently add wet ingredients to dry.
Stir until just combined.
Fold in chocolate chips.
Scoop 1/4 cup batter per each muffin.
Bake for 23-25 minutes, or until inserted toothpick comes out clean.
Makes 12 muffins, about 175 calories each.
Sunday Snack Review: "Healthier Banana Splits"
I was craving ice cream all week so I decided to make a healthier banana split option.
Ingredients: 1 banana 1/2 cup plain greek yogurt Honey to taste Vanilla extract to taste 3 cherries Low-fat whipped cream Handful of nuts of your choice
Directions: Mix greek yogurt with honey and vanilla extract. Slice banana in half and top with yogurt mixture. Freeze for 30+ min. Top with whipped cream, cherries, and nuts. You could also melt peanut butter as a topping instead of cream!
Rich Chocolate Strawberry Banana Protein Pancakes
1/4 cup unsweetened vanilla almond milk
1 large ripe mashed banana
1 ex large egg
1 tbsp unsweetened cocoa powder
1 scoop chocolate whey protein (Optimum Nutrition)
1/2 cup oat flour
1/2 tsp baking powder
1 tsp stevia (or choice of natural sweetener)
Mix above ingredients well. Cook on medium low heat.
These were so good! My boyfriend even said these were among his favorite protein pancakes that I have made to date. I also have had a couple of IG followers make them with positive reviews! Enjoy :)
It has been so cold this week! I feel like I’m back in Wisconsin every time I step outside. What better way to counteract the coldness than a steaming bowl of soup?
Beef Stew 8 servings
1 pound lean beef, cubed 1 tablespoon Worcestershire sauce 1 tablespoon olive oil 1 large onion, diced 1/2 cup tomato paste 4 cups beef broth 2 large turnips, chopped 16 baby carrots, chopped 4 small potatoes, chopped 4 cloves garlic, minced salt and pepper to taste
Cook the beef in a hot pan, seasoning with salt and pepper and Worcestershire sauce. Once browned, remove from heat.
Cook the onion and garlic in the oil until softened. Add the beef broth, tomato paste, beef, carrots, turnips, and potatoes. Let simmer for about 30 minutes, or until the vegetables have cooked.
If the soup thickens too much while cooking, add more beef broth or thin it out with water.

Sugared Donuts / Bacon / 2 Eggs / Butter / White Wine Vinegar (1)
HEAT grill like the fires of hell (you know, on full)
LAY out bacon strips (2)
THROW under grill
PLACE small pan of water on to boil
ADD two caps of white wine vinegar to water
FLIP bacon strips
MELT butter in frying pan
CHOP donut in half and fry in butter (3)
TAKE donuts out of pan
CRACK egg and gently tip into water (4)
SWIRL water around slowly (4)
REMOVE egg from water after 3 minutes (4)
RESCUE bacon from grill
ASSEMBLE the tastiest donut known to man (5)
INSERT into your face
DIE happy as a tribute to food satan
