When it comes to Ganondorf and portraying his evil, I think it's very important to understand that there is whimsy to his evil, the whimsy that is inherent to LoZ as a franchise. Ganondorf thought the pinnacle of evil was to title himself "the GREAT King of Evil" and then installed an organ at the top of his super evil tower so that he could play his own theme song while Link approached him. He suspended his super evil tower over a LAVA pit that is only accessible by rainbow bridge. He argued with a tree and cursed it because it didn't give him what he wanted. He quite possibly forged a note from a zora princess and put it in a bottle and tossed it into the lake with hope and a prayer. His plan to kill the queen of Hyrule with a super powered magic stone was to neutral jab her and hope her spine was made out of paper. He thought it would be exceptionally evil to control Yunobo by making him wear a luchador mask and matching costume. He scared away Zelda's horse because he could. Like he is evil sure but he is also exceptionally cringe and I love that for him.
