First coffee at @marks_bread in an age. I used to go there several times a week pre lockdown, on my own and with friends. Now they have a few tables outside you can sit at so I met a friend for a catchup and was looking forward to a flat white made with proper bonsoy, but was rather disappointed they've taken soy milk off the menu and only have cow or oat milk. Ate out last night at watershed before a film, so just a quick snack of tortilla hips and hummus and some chilli peas 🌶 I know I usually avoid hummus but this was ok, nice texture, and just about enough tortilla chips. Came with olives too. I was going to get a salad with it but decided to try the peas with mint and chilli, which I'd have again. The Vegetarian loved his cauliflower and cumin soup, with a side of fries and mayo, obvs. His only disappointment was the less than hot chocolate. If we'd had more time we'd have gone for more mains options which looked good as they went past. All table service, staff masked, and it felt safe, and nice to be out. So excited to be meeting someone outside family to chat, catchup AND to eat out that I forgot to take photos, but here's dessert! Just quickly wanted to share that @riversidegardencentre cafe had vegan cheesecake today. The excitement of sitting chatting with a friend AND eating cheesecake made up for the curdled soy milk in my americano 😁 (I should've known better than to get a double shot.) But back to the cheesecake!! So nice to not just be offered flapjack as the vegan option that I didn't bother to ask if the cheesecake was glutenfree (sorry!) I just scarfed it down. Would eat again. Gluten-free vegan hot cross bun loaf from @rhiansrecipes Didn't have quite enough ground almond so upped the flour content. Used sunflower instead of coconut oil as it was easy. Didn't add the flour paste cross decoration but the blood orange juice seemed suitably sacrificial. #snack Found a new vegan cream cheese - @nushfoods creamy chive. Went nicely with these sea salt and rosemary crackers from @nairnsoatcakes I managed not to eat the whole box of crackers in one sitting, but in two... I made profiteroles! I followed the recipe on the @freeefoods website and it worked! I tromped round the shops looking for their white bread flour but then discovered I could use the ordinary white flour with a pinch of xanthan gum. Filling was vegan vanilla soy dessert with a drop of extra vanilla essence, topped with coffee icing. Our improvised vegan Sunday dinner was butternut squash with seeds and peanut stuffing, with roast potatoes and veg, then a jam rolypoly from a @nadiyajhussain recipe. I have to admit to using asda freefrom gravy granules on the roast! We had the squash in our organic veg box and this is the first time I've bothered to scoop out and stuff one, I got put off stuffing vegetables in the 1970s!! Bit too much faff, I'm lazy like that, which is why I rarely make shepeherds pie or moussaka or lasagne or anything that needs too much assemblage. But I'd do this again, maybe with more varied nuts rather than improvising with what was in the cupboard ie peanut butter, pumpkin/sesame/sunflower seeds. The rolypoly happened because I'd just made loads of marmalade and fancied a sticky pudding, but The Vegan wanted a strawberry one so I sacrificed a jar of my runny homemade jam. Used @Naturli vegan butter, @freeefoods white flour and some vegan suet I found in the fridge. It was a bit of a mess but that was me not the recipe, and tasted especially nice when we poured extra jam on and added @swedishglace vanilla ice cream. Today's cake is a vegan carrot cake from a recipe by @schoolnightvegan in @olivemagazine I used @freeefoods dovesfarm gluten free brown bread flour and @naturli vegan block for a butter icing with a dash or orange and lemon juice instead of the cream cheese topping. The cake is great. It would've been even better if I'd waited for it to cool before assembling. I've been meaning to bake a ginger cake for a while so I found a recipe and did the usual substitutions: Dove's Farm flour, Naturli vegan butter, provamel organic soya milk. I didn't have quite enough black treacle ( I love licking that spoon) so topped up with golden syrup and used mostly a dark muscovado sugar to make up for it. It worked really well, nice and light and the drizzle of lemon icing is a nice finishing touch. Next time I'll add a bit more ground ginger i think, or buy some new! I'm loving using this ring springform tin, it makes cakes look a bit more special, and means they cook better in the middle. I bought these two chocolate bars in an attempt to develop a new palate that doesn't miss hazelnut milk chocolate. I felt quite sophisticated until I tried to eat them, and could only manage half a square of either. The lindt ended up in some chocolate icing, and I'm sure the montezuma will share that fate. The Vegan found a butternut squash pasta recipe and very nice it was too. Roasted squash, blended with garlic and herbs and plant milk. We had no soya milk in the house so instead added a handful of soaked raw cashews (made it very creamy) and some water. Then put the blended mix in a pan with finely chopped fried onions, added the pasta (glutenfree Sainsbury's spaghetti) and a bit of pasta water, seasoned, stirred and served. Current favourite sweet treat is this almond and hazelnut nougat from Aldi. Sugar is the main ingredient. It has the perfect level of nuts and soft chewiness and is dairy and glutenfree. Hating this wild wet weather so much today I decided to make a chocolate cake. This is my slightly inept attempt at a gluten-free version of Nigella's Dark & Sumptuous Chocolate Cake, which is already vegan so easy to adapt. I didn't have any coconut butter for the icing so used Naturli vegan block, and to make it gluten-free I used Dove's Farm white flour. I had to cook it for ten minutes longer than the recipe said so the centre wasn't liquid which maybe to do with using gluten-freeflour? My decorating is a bit minimal, no pistachio or rose petals to hand so I picked a few rain-washed violas from the hanging basket in an effort to make it look interesting. 🌸 Now just waiting for the cake to cool down, and hope the chocolate topping will set enough to stay put when I cut it. I used one of the special plates I bought for visiting grandchildren to use last Xmas, that always make me think of them. I don't think my babies can come stay with us this year, and I shall miss cooking sessions with them and sharing goodies in the kitchen. First trip to Sainsbury's since the beginning of the year and went a bit wild on the freefrom snacks... These are now officially my favourite mince pies and I probably should have let The Vegan eat more than three of the nine. I also ate a pork pie in the car. Such a bad habit, but i think it's only the second one I've had this year. A friend ordered me one in her online shop but her puppy found it first, so another friend got one for me a while ago. The Resident Vegan suggested pasta with kale and hummus and it's rather nice. Glutenfree pasta, onion, garlic, kale, spinach, lemon juice, sesame seed, olive oil, yeast flakes, salt, pepper. Not necessarily in that order. Needless to say The Vegetarian added cheddar. Didn't do very well with the tomato plants I grew from saved seed. Oh for a greenhouse! Like many people this year I've been trying to grow foodstuff and herbs in our tiny garden which is about 3.5 x 6 metres. These were out front in the narrow strip where it's sunny after lunch but also quite windy.
