This Southern-style sandwich has hearty sourdough bread in the middle and classic flavors like turkey, pimento cheese, and fresh vegetables on the outside. This sandwich is great for a quick lunch or dinner and will satisfy your need for comfort food with a twist.
Ingredients: 8 slices of thick-cut sourdough bread. 1 pound sliced roasted turkey breast. 1 cup homemade or store-bought pimento cheese. 4 tablespoons unsalted butter, softened. 1 cup baby arugula leaves. 1 medium ripe tomato, sliced. Salt and black pepper to taste.
Instructions: On four pieces of sourdough bread, spread a lot of pimento cheese. Put slices of roasted turkey on top of the pimento cheese. Set some arugula leaves and tomato slices on top of each sandwich. Add black pepper and salt. Add another slice of sourdough bread to the top of each sandwich. On the outside of the sandwiches, spread softened butter. Turn on the stove to medium-low heat and add the sandwiches, buttered side down. About 3 to 4 minutes on each side, or until the bread is golden brown and crispy and the cheese melts. Take it out of the pan and let it cool down a bit before serving.
