Middle Eastern Chicken and Chickpeas with Kale Salad
Several weeks ago I cooked a Bon Appetit recipe for Za'atar Roast Chicken with Green Tahini Sauce...it was SO tasty. Za'atar is a traditional Middle Eastern spice that I have come to learn tastes delicious on well..just about everything (hummus, veggies, yogurt, etc).
Bon Appetit's recipe calls for fresh oregano, but I didn't have any lying around, so I settled for dried...still awesome!
So yesterday, with some of this leftover spice hanging around, I decided to do my own, impromptu version of the dish. It was quicker, easier, and still full of middle eastern flavor!
Middle Eastern Chicken and Chickpeas
2 boneless, skinless chicken breasts, cut into 1/2 inch strips
1 can of chickpeas, drained and rinsed
Dash of crushed red pepper flakes
1. Mix chicken, oil, lemon juice, za'atar and salt in a bowl. Let sit for 20-30 min (or longer! I was just doing this on the fly so I had to start cooking :) )
2. Toss into a frying pan on medium heat with another tablespoon of olive oil. Cook for 6-7 minutes, or until chicken strips are almost fully cooked.
3. Pour chickpeas into the pan with the chicken and add the red pepper flakes. Toss this mixture for about 1-2 minutes, or until chickpeas are warm and chicken is cooked through.
4. Plate dish on top of grains (in this case, I used couscous), or eat it alone for a low-carb option. Top with 1 T of the yogurt, fresh mint leaves, pine nuts, and another sprinkle of that tasty tasty za'atar spice! Ta-DA!
The Lemon-y Kale Salad on the side is super simple.
-Chop up a bunch of kale (stems removed)
-Toss in 2 T fresh lemon juice and 1 T olive oil
-Massage (yes, massage) the leaves with the juice and olive oil...it helps soften them up but remain crunchy!
-Finally, mix with grated parmesan cheese, salt, and ground black pepper.
-Top with pine toasted pine nuts!**
**The DP ladies would top everything with toasted pines nuts if they could...and if they weren't so expensive!!
Ps- I almost forgot! Q and I made the best Old Fashioned last night. Definitely not Whole-30 approved...sorry B! To create: muddle together a small orange slice, sugar cube, and several dashes of bitters. Top with ice cubes and a shot of bourbon! Garnish with orange peel to feel fancy. Cheers!
