Day Trip in and around Jackson NH
Sometimes you just need to get away for a day to relax and see the sights. That's exactly what I did in the middle of October. The foliage was spectacular and the weather that day was warm and sunny and just glorious.
One of my most favorite hobbies is photography; probably even more so than baking, as it's easier. Ever since I went out that day, now I just want to take photos every day. It's so great to get out to places you aren't all that familiar with and just really look and observe and enjoy.
Jackson and the surrounding towns celebrate the pumpkin people every year so I checked those out as well, they are great fun to see.
Wow! I certainly got an eyeful that day! Get out there and explore!
Beech Hill Farm
Beech Hill Farm is in Hopkinton NH on 107 Beech Hill Road. We try and make it here every year, they have great ice cream and it's in a beautiful setting. There are a lot of neat things to look at around the farm too.
Beech Hill Farm has Blake's and Richardsons brands Ice Cream. There is a huge list of flavors. On the counter near the register is a list that explains some of the flavors, get that first if you can so you don't have to make your decision in a split second when its your turn.
As you can see our latest trip there was in the fall. It's a great time to go as they have lots of pumpkins and gourds for sale.
We bought one of those huge white pumpkins for $20. It was mammoth.
One barn has lots of antique stuff to look at.
Lot of beautiful flowers are for sale too, as well as garden ornaments.
Definitely a neat place to explore. If you order a sundae, be prepared to make your own! I would not order a large sundae either, small will leave you feeling stuffed to the brim. The make your own sundae bar is fabulous and was neat and clean when we were there. Kids love this place, there are animals for them to meet too. What are you waiting for? Go!!!!
No Bake Pumpkin Cookies
I'm sure you have tried the chocolate no bake cookies. I know I have made them a million times. I was certainly thrilled when an FB friend posted this recipe to her timeline, I knew I had to try and make them right away. The hardest thing about this recipe is finding the pumpkin spice pudding. If you can locate that you are all set. It's a seasonal pudding so finding it isn't easy.
Ingredients:
1 ½ cups Sugar
½ cups Brown Sugar
¾ cups Butter
⅔ cups Milk
3.4 ounce Pumpkin Spice Instant Pudding Mix (If you can't find this maybe use vanilla pudding and extra pumpkin pie spice) I have found it at Hannaford's and Walmart.
1 teaspoon Pumpkin Pie Spice
1 teaspoon Vanilla
3 ½ cups Quick Oats
In a saucepan, combine white and brown sugars, butter and the milk.
Bring to a boil. Boil 2 minutes.
Remove from heat and add in the box of pudding, stirring to combine completely.
Add in pumpkin pie spice, vanilla and oats.
Stir to combine and let stand for a few minutes till it looks a bit firmer.
Sorry about the blurry photo, I think I got to excited here. This is the stage where you will be ready to taste it because it looks so yummy, but remember it's hot!
Drop by rounded tablespoonfuls onto waxed paper, and allow to cool completely. Yeah, like that is going to happen.
I really enjoyed these. Yes, they are totally bad for you, but so good. Give some of them away so you don't feel so guilty. Happy Fall!
Millbrook Gallery & Sculpture Garden
We try and make it to the Millbrook Gallery and Sculpture Garden every year. It's free, it's peaceful and it's fun to explore the sculptures.
The Gallery is located at 236 Hopkinton Road in Concord.
I love the monkeys above, I think these were $1000 and one of the cheapest sculptures here.
Even the resident geese like to check out the sculptures.
Go and check it out; fall is a great time to go. Once your done, go and get an ice cream over at Beech hill, not to far from here. It's a great way to chill out.
The MV Kearsarge Restaurant Ship Dinner Cruise
Finally!!!!! We went on the dinner cruise on the MV Kearsarge Restaurant Ship. We've been wanting to go for years, and finally had time for it. We are so glad we went, we enjoyed it so much. What was great about our dinner cruise was that only 16 people were dining that evening, so we had a lot more room on the boat. It was nice not being packed in like sardines. All of us were sat in the upstairs section of the boat which has a slightly better view. the whole downstairs was empty.
The Captain himself seats each couple or group which was a nice touch. The Captain was great; very personable and extremely friendly, only in his 30's. We talked to him a lot.
Once you are seated, it's not long before the servers introduce themselves. We ordered and Elderberry Margarita and an Elderberry Sangria, the specials of the night. Yum Yum. While waiting for our drinks we munched on crackers and garlic herbed cheese spread which was very tasty.
Once everyone is on board, and the Captain backs out of the dock, he invites you to get out of your seats. We went to the front of the boat (the bow). There are a few seats up there and plenty of room by the railings. The weather was just perfect the evening we went, it was in the 80's during the day and it stayed warm through most of our cruise. I did bring a fleece which I put on towards the end, when the sun had gone down.
Lake Sunapee has three lighthouses; Burkehaven Lighthouse, Loon Island Lighthouse, and Herriick Cove Lighthouse.
It was time for dinner! Buffet style. Now I will tell you, we dislike buffets, mainly because of people touching things they shouldn't be touching. We had no issues with this buffet. The set up started off with lettuce and everything you would want to put on salad. Scalloped potatoes, mac & cheese, mixed veggies, pulled pork, veggie lasagna, roast beef at the carving station. Best pulled pork I ever had, moist and delicious. Rolls too. I also think there was baked beans, but I somehow forgot to get them. Once everyone had food, you were welcome to go back for more. There was plenty cooked, that's for sure. You will not go hungry. There was also 3 types of cake for dessert; being the dessert hog I am, I wished I could have a piece of each, but I was good and chose the chocolate mousse. Yum!
A fun time was had by all, even the employees seemed to be enjoying themselves. I definitely recommend this quick getaway!
Pittsburgh NH
We spent a few days up in Pittsburgh NH to get some 4-wheeler riding in. Originally we were planning on tenting up there, but ended up looking at cabins and found one that just looked so perfect for us, we couldn't resist. The only thing bad about it was that no pets were allowed, so Syd had to stay with her grandparents.
I love Pittsburgh for its beauty, peace and quiet. However, in the winter I'm sure I would die there.
Look at the kitchen in the cabin! Very nice!!! The wood chosen for the cupboards looked great!
We shouldn't have stayed in this cabin, as about as soon as we walked inside, we wanted one too. It wasn't long before we were designing our own cabin, and the next day we went to the last General Store In NH to buy a lottery ticket. The store owner was also hoping we would win so he could win $30,000 and get some attention.
There was room enough in this cabin for 5 people. There are also 2 other cabins available which can accomodate more people.
How about a Jacuzzi in your cabin? We had one.
Here is the cozy living room. You will not have cell service here, but you do have DirecTV. There are areas in town you can try to get your cell phone to work, but it isn't always easy. Remember though, you are trying to relax and having no cell or internet is a good thing. When you leave and finally do have it, you will see that you missed nothing, an nothing exciting has happened in the phone world.

We stumbled upon 2 covered bridges while out riding. There is a 3rd covered bridge in Pittsburgh, but we never did locate it. This was when we missed our cell coverage, and could not look things up; you have to carry encyclopedias up here I guess. Yes, we should have asked someone, but we tend to forget things like that.
Pittsburgh has beautiful lakes.
Drive down Magalloway Road, which is a long dirt road for 5 miles, take a turn at sign and go another 3 miles, park your vehicle and hike a rugged trail to the fire tower. Thank heavens we saw no wildlife while hiking. There was no sign at the bottom saying how long the trail was. That's a pet peeve of mine. Some idea would be nice; is it ten feet or ten miles? It seemed like we kept going and going, it was much farther than I had wanted to hike after a day of 4-wheeling and temps somewhere in the 80's. I was already encased in a layer of dust and dirt, and now I was sweating once again like a pig. Do pigs really sweat? We took Coot trail but there was also Bobcat trail. Coot is supposed to take 45 minutes one way.
So as you can see we made it to the tower and it was all worth it to see the views on a perfectly clear day. Rob says I would never make it anywhere if it wasn't for him. I got all excited when climbing to the top of the tower and I heard the ding of my cell phone. I tried to make a call but to no avail. I was however able to send a text to check on our doggie.
We figure we went on most of the trails in Pittsburgh and I feel like I did a good job. Only one trail scared me and yes it was most advanced, which as usual I didn't know until I reached the bottom. It was just a steep, steep trail which took a lot of work to get down, but I did it! We also found a lot of water/mud on the trails which I really like, until it comes to cleaning the ATV'S.
There was also a fire pit so you could have a fire at the cabin. The weather was perfect while we were there!
Pittsburgh was a great getaway. Going during the week is the best, no traffic on the way up or back. How many four wheelers did we meet on the trail? TWO!!!!! Having the trail to yourselves is just fantastic! Have a trail map before you go up if possible. If you try to buy one now you will not find one. We were fortunate to have met a lady working in a state park who called her husband who we met up with in another location and got us a map. It would have been a rough day without that map. Everyone seems to go above and beyond up here.
On our first day out we were extremely lucky to see a moose with 2 calves, a coyote and a deer. The second day we saw nothing. On our way home right before Franconia Notch a moose crossed the road; a truck was in front of us, and fortunately we managed to stop ok. It's not easy to stop quicly when you have a trailer attached to your truck. That same evening a driver was killed by a moose somewhere in the same area. Definitely watch out for the moose.
Saw this beautiful waterfall on the way home.
We were just feet from Canada but decided to stay in the USA and get back home.
Chicken Fingers
I made this recipe one day mainly because I was tired of eating chicken the same few ways over and over again. I didn't expect that we would enjoy this so much, and the good news is that it's real simple to make! It's a good recipe to get the kids involved with, so one day they will be great cooks too. The best thing about it is that its made with simple ingredients and they don't contain all the junk that's in store bought chicken fingers.
First, get some boneless chicken breasts and slice it into finger size pieces.
Next take 2 eggs in a small bowl and mix them up with a fork. Take another small bowl and put about a 1/4 cup of flour in it. Take a third small bowl and pour in some panko crumbs. You can also use bread crumbs if you desire. I have only made these so far with the panko.
Next take a piece of chicken and put it in the flour, covering it completely.
Now put the flour coated chicken into the egg and cover it with the egg.
After the egg, take the chicken and lastly dip it into the panko. Get it covered really evenly.
Continue to do this until all pieces are coated. Spray a pan with cooking spray and put the fingers on it. Put in preheated 450 degree oven and bake about 10 minutes. Time will also depend on the size of your chicken fingers. Don't be afraid to cut one in half to test for doneness, you don't want to over cook them. These also reheat well so I purposely make extra for leftovers.
These are great with mashed potatoes and corn on the cob, or really anything your little heart desires. Do have some of your favorite dipping sauce for dipping. The last time I made these I mixed up some maple syrup and some sriracha sauce.

Sweet and Sour Chicken
I think this recipe is amazing. It's a keeper. It may even keep you out of a Chinese Restaurant. I got a wok last year for my birthday. Nine months went by before I dared to use it. Don't do that!! There is nothing to be afraid of, I am loving my wok and wish I hadn't waited so long to give it a try. If you do have a wok and use it frequently, good for you; do give this recipe a try. If you do not have a wok that is ok too! I've made this with a normal skillet too, as you will see in the photos below.
Ingredients
Chicken Coating:
3-4 boneless, skinless chicken breasts cut in bite-size pieces
3 eggs
1/2 cup flour
1 1/3 cup cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ginger powder
1/4 teaspoon onion powder
Sweet and Sour Sauce
1/2 cup pineapple juice (from 20 oz. pineapple tidbits can below) I used 3 containers of the lunch container tidbits as that was all I had on hand. even using the larger pineapple chunks would be fine. Next time I will even add in some maraschino cherries.
1 cup red wine vinegar
1 ½ cups sugar
1/4 cup + 2 tablespoons ketchup (6 tablespoons)
1 small onion, diced
2 tablespoons soy sauce
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon red pepper flakes- more or less to your liking. this amount gives a mild hot. your lips will not be on fire.
1/2 teaspoon ginger powder
Vegetables/Pineapple
1 (20 oz) can pineapple tidbits
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup carrots, sliced as thin as possible (2-3 carrots)
Instructions
Add "Sweet and Sour Sauce" ingredients to a medium/large saucepan or wok, stir and bring to a boil then reduce to a gentle simmer. Allow to simmer while you prepare the chicken and dice the vegetables, stirring occasionally (turn off if longer than 20 minutes). Note, the sauce will not thicken, simmering is to soften the onions and blend flavors
Preheat oven to 350 degrees and lightly grease a 9x13 baking dish with non-stick cooking spray.
Whisk eggs together in a large bowl,and set aside. Add ½ cup flour to a large freezer bag; set aside next to eggs. Whisk cornstarch, garlic powder, salt, pepper, ginger powder and onion powder in medium bowl; set aside next to flour.
Add chicken to eggs and coat, then remove, allowing excess to drip off, then add to freezer bag with flour. Toss until evenly coated then discard any extra flour. I had no flour to discard. Add cornstarch/spices to the chicken in the freezer bag and shake until evenly coated.
Over high heat, heat enough oil (any kind) to generously cover the bottom of a large skillet until hot and rippling. Add chicken and cook 1-2 minutes per side, or until browned but not cooked through. (You may need to cook in 2 batches depending on size of your skillet). Transfer chicken to prepared 9x13 baking dish.
Add carrots pineapple and peppers to the sweet and sour sauce and mix until well combined. Pour sauce over chicken and stir until sauce/chicken/vegetables are evenly combined. Cook, uncovered for 50 minutes or until sauce, stirring occasionally.
Serve with rice and whatever other Chinese food you make. Enjoy!
Homemade Ice Cream Sandwiches
Looks yummy right? Wondering how to make it? It's so easy!!! All you need to do is bake your favorite cookies. I made chocolate chip cookies, but this would be great with peanut butter cookies too. Please make them yourself, and shortly after they come out of the oven and have cooled a bit, continue with the next step. Don't use store bought cookies, they just won't be as sinful and delicious.
Be sure to make the cookies a bit bigger, you will want them about the same size as the width of the ice cream container.
You will also need a container of Ben & Jerry's ice cream or a similar size carton of your favorite brand. I chose Ben & Jerry's as a special treat. I chose a fancy schmancy flavor, but I recommend vanilla, otherwise these bad boys get pretty sweet real fast.
Once those cookies are cooked and slightly cooled take the ice cream out of the freezer. Get a sharp knife, but don't use your best knife, as you don't want to kill it.
Take that knife, and slice right through the carton, you want a slice approximately 1 inch. I figure you can get about 4 slices from one container. Watch your fingers!
Above are two slices, you will have to work fast, because melting happens fast. Now grab 2 cookies and arrange an ice cream sandwich!!
These are pretty big and really filling, you may want to slice one in half and share; you might end up with a belly ache. Kids will love making these and you will surely love eating them! Enjoy!
Holy Grail of the Lakes Food & Spirits
It was finally a rainy day in NH, and since we were stuck inside and just feeling sleepy, we decided to go out to lunch. That morning while reading the Sunday newspaper, I spotted an article for a new restaurant in Laconia, NH; Holy Grail of the Lakes Food & Spirits. We figured, why not give it a try.
The restaurant is in the old Evangelical Baptist Church at 12 Veterans Square. This church was placed on the National Register of Historical Places in 1985. A ton of money was spent on renovations and it opened this month.
At first we had a hard time finding the church. There are a ton of road signs up in the area, road detour signs, cones, you name it. Then if you have gone to far, the road just comes to an end and you have to turn around. Eventually we found it. Then it took us a minute to figure out which door to go in, go in the front door. There are lots of stairs, but there is also an elevator for those unable to tackle them.
We were seated by a hostess, and we were sat at a tiny table to the side and behind the bar. A nice location, and next to a beautiful stained glass window.
The church is beautiful, we looked all around in amazement all while wondering when our waitress would show up. When we had grown tired of waiting, and waiting, and waiting; we began to think of other restaurants we could go to. We were ready to walk out. Simultaneously the Owner and a waitress appeared at our table. Finally!! We did not look approachable I'm sure. Evidently the hostess had given the waitress 3 tables all at once. Not our problem though, we just wanted to eat. We were off to a bad relationship.
The Owner offered us drinks, we just ordered a water and a lemonade. Not sure what happened after that, but we again waited a good long time. The waitress even came back to ask us what we ordered for drinks. Oh my goodness!
Eventually water was found, and we got our beverages. Again the Owner appeared asking us if we wanted an appetizer on the house while we waited for our food.
We ordered Guinness Steak Tips, I ordered mine with mashed potatoes, and Rob ordered French fries. The waitress said we could order 2 sides but only hearing of starches, we were a bit confused and each of us ordered a salad not knowing if this would cost extra or not.
We again waited a long time for these salads, but let me tell you, when they came they were magnificent. Huge. The person who delivered them called Rob Sir and the Owner said they were made bigger than usual for us. They were delicious and made with fine ingredients. You know I hate iceberg lettuce and there was none here.
Then the steak tips arrived. My salad plate and my dinner plate barely fit on my side of the table, try and get a booth for sure if you go or sit at the bar. The steak tips were delicious and so were the potatoes. We had both ordered the steak tips without peppers and onions, Rob got mushrooms with his. I was feeling better about the place.
We saw the food the table next to us ordered, and it looked delicious as well; boiled dinners, Shepard's pie, scotch eggs and Guinness beef stew.
The owner Dave came over like a million times, he did a marvelous job tending to us, and made us feel like someone cared about our experience there. He introduced himself and shook our hands a couple of times. He only charged us for one dinner. He spoke to us for a while telling us a story of how someone in town who named himself a bishop wanted the cross taken off the top of the building. He told us about the church and told us to go upstairs and look around.
The fan in the above photo is huge, be sure to take a look at that.
We will go again, maybe in a couple months, when the kinks are all worked out. We loved the building, it's absolutely beautiful and I am thankful the church was restored and is being put to good use. For once I didn't feel nervous in a church.
Up North With the 4-Wheelers
Finally! A weekend away with the 4-wheelers!! We rode on trails in Jericho Mountain State Park as well as the Success Trail which lead to Success Pond where we ended up at a boat ramp. We also went as far as the LL Cote Store in Errol, NH, which was mobbed and has almost everything a person would need; camping equipment, bug spray, guns, clothing, gift items, archery equipment, even ice cream. I got a bowl of smores ice cream which was yummy.
We stayed at the Top Notch Inn in Gorham. Now I will admit that I prefer 5 or as many star hotels as I can get. This is not one of those hotels, but it worked out just fine. We only needed a place to sleep and shower. It was clean, and I would stay there again. The only major trouble we had there was excessive heat in the room. They had to come and shut off the heat as something was stuck on, it was 78 in that little room by the time we called. We were given a little space heater instead as that first night temperatures dropped way down and it was freezing outside in the morning. Brrr!
The only other problem we had occurred on the second night and that involved the family sleeping next door with 2 children. These people made so much noise, they were either playing football in their room or putting all of the furniture on the roof. I never got up to check but I could have killed them. I have to laugh as the people on the other side of us, were two rough and tough guys who also came up for 4-wheeling. We heard not a peep from them. Thank you kind sir's.
Above is a photo of some of the parked vehicles. Never had I seen a hotel parking lot look like this. I find it totally cool for sure. Trucks and trailers were parked out back, and your smaller mode of transportation was parked out front. Now the coolest thing of all is, we could drive right to trails from this parking lot. Yes!!! We could drive on the main streets and on certain other streets. We could go to restaurants and stores and gas stations all on our 4 wheelers! I have no photos of us driving our ATV's on the main roads, as well, I didn't want to get killed. There was a lot of traffic here. I have to say, it would be nice to have blinkers, I kept thinking I would be rear ended. We will also be getting little mirrors to make seeing behind us easier.
As I said before, Saturday morning was freezing. I had on a pair of long john bottoms, a pair of pants, and a thin third pair of pants. A long sleeve shirt, a t- shirt, a sweat shirt, and a warm coat. While driving, I was warm, all but my hands. I started off wearing gloves and when I had frostbite, I switched to mittens. Sunday was so much warmer in the morning, thank heavens!!!!
Saturday we started off at the firehouse. The Gorham Fire Department was having a breakfast for $7. Pancakes, eggs, bacon, coffee and OJ for $7. You can't beat that and it goes to a good cause. They also had a 50/50 raffle which we lost and a Poker Run. Now you may not know what a poker run is. You pay a fee and are given a paper which lists 5 stops along the trails that you must make. At each stop there is a person to check you in. You pick a card and they write what card you got on your paper. You are hoping to have a good hand by the end of all the stops. We of course got terrible cards and won nothing, but again, it went to a good cause.
With full bellies, off we headed to the trail head. We had packed a lunch, our room had a sort of functioning baby fridge. I can tell you the trails were pretty well marked, but I also had an expert map reader with me. I'd probably still be lost there myself had I gone alone.
With no rain in over a month, the trails were bone dry and wicked dusty. I ate a lot of dirt and did a lot of sneezing. Tissues are a must have and blowing your nose isn't pretty. Ugh! Yuck! We were filthy at the end of the day.
Above is the warming hut, inside is a lovely woodstove, where we warmed up. I would like for this to be my cabin.
I think Rob likes the cabin too.
Who would not want to sit here:
People going on trails didn't seem to wake up early, which worked out well for us. In the mornings you pretty much had the trails to yourself, by afternoon they were busy and you had to pay real good attention to oncoming vehicles through all that dust
Now let's talk about the trail from hell. Rene's trail. Pure rock trail that goes on forever, it seemed like the end would never appear. This was a skinny trail which was totally covered with moose poop. Had you ever seen a moose, you would have been doomed as you could not turn around, and you could only crawl through this rugged rock trail. I nearly cried twice, and I'm not kidding. I hated this trail and don't ever want to go on a trail like this again. It is hard to see in this photo, but these rocks were big, and it wasn't an easy chore getting over them. Never again. I said the F word at least a million times. I'm pretty sure my blood pressure rocketed. It was sort of funny as later on in the day we were speaking with Henry, the President from the Presidential OHRV club, he said he would never go on Rene's trail. So, I give you my warning. If you like rocks, go right ahead. You will work up a sweat on this one. A big thank you to Henry and all of the other members of the Presidential OHRV Club that we spoke to. Every person went out of their way to be nice, and offer us advice on trails. Thank you!
Not long after we went on Eric's trail, which started off just as bad. I was ready to strangle Rob for getting me on another dreadful trail, but fortunately only the beginning was rock.
Below is the beautiful building of Jericho Mountain State Park. What a lovely area.
It was windy!
For dinner the first night we at at the Salt Pub. Chef Liz Jackson had cooked with Julia Child. How lucky Gorham is to have this restaurant. It's a small, cozy place that fills up soon after opening, so get there early or be prepared to wait. Do try the crispy duck ravioli for an appetizer. Who knew we would like shredded duck confit?!! Then grab yourself a burger; locally raised beef on homemade buns served with homemade chips in a mug or order some hand cut fries. I had the Cambodian Bowl, you will have to try if you are feeling adventurous and want something like you have never had. I can't even describe it, but it's very filling.
For dinner the second night we ate at Mr. Pizza. They have a huge menu and it's way more than pizza. We both ordered prime rib which was delicious. Our only complaint here was the waitress.
Sunday we were up at the crack of dawn again. Drove the 4 wheelers down to Welsh's for a breakfast buffet. We usually avoid buffets but this one was pretty good. They claim it's a 35 foot buffet, with anything you would ever want for breakfast (unless you are looking for those cute tiny cereal boxes). There is an omelet station and a Belgian waffle station all for $10.95 each. Again, we got there before the mob so I don't know what it's like when its busy.
After breakfast we headed for the trails. Today we were doing the Success Trail and then we ended going all the way into Errol.

A little dirtier than when we started. Packing up to go back home. Before we left, we ate at Mountain Fire Pizza, you can walk there from the hotel. Wonderful Pizza and the cheapest place we ate. The pizza is cooked in an oven over wood.

Snow Ice Cream
It's snowing in NH right now. Forget about shoveling for a minute and get ready to have some fun! I'm no kid but I sure had fun making this recipe. If you have kids they will be delighted I'm sure.
Ingredients:
1 cup milk
1/3 cup sugar
1 teaspoon vanilla extract, or perhaps your favorite flavor, maybe peppermint?
pinch salt
8 cups clean snow
Mix all ingredients except snow. Mix well and put the bowl in the fridge while you go out and gather snow. Bring a big bowl outside and a 1 cup measuring cup. I put more than 8 cups in, as I didn't want to have to bundle back up and go outside again in case I needed more.
When you get back inside, work quickly; take the bowl out of fridge and stir well again, the sugar likes to separate from the other ingredients. quickly add in snow and stir until you get an ice cream consistency!
That's all there is to it. How can this not be fun? And its pretty yummy too!!!

Vegetable Fried Rice
2 large eggs, scrambled
1 small yellow onion diced
3 cloves garlic minced
2 tablespoons canola or vegetable oil divided
1 red or orange bell pepper, chopped
1/2 cup frozen peas
1/2 cup finely chopped carrots
4 cups cold cooked rice. cook this the day before.
3 green onions sliced
3 tablespoons oyster sauce
3 tablespoons soy sauce
DIRECTIONS:
If you want egg in your fried rice, heat a large non-stick wok or skillet to medium heat, and scramble the eggs and set them aside; otherwise leave them out. I like the egg in the rice.
Heat 1 tablespoon oil in a large skillet or wok over medium high heat. Add in the diced yellow onion and cook for a few minutes, until the onions are tender and translucent. Add in the garlic and sauté for a minute or two longer, until fragrant. Remove from pan.
Add in an additional tablespoon of oil if needed. If using, toss in chicken or shrimp along with the chopped red bell pepper, chopped carrots, and peas. Stir-fry for a few minutes, or until the chicken or shrimp is cooked through and the veggies are just starting to get tender.
To the pan add in cold cooked rice and green onions. Add in 3 tablespoons oyster sauce and 3 tablespoons soy sauce. Stir to incorporate. Add the cooked yellow onions back in along with the scrambled egg. Stir to incorporate. When everything is just about heated through, remove the fried rice from the heat and serve immediately.
Feel free to adjust the seasoning with salt and pepper. All I did was add a little pepper.
A delightful recipe. This rice will go with anything! I am not missing my Chinese Restaurants!
Chocolate Italian Love Cake
This is an easy cake to make. I kept thinking it wasn't the best cake I had ever eaten, yet I couldn't stop eating it. It lasted well in the refrigerator and tasted just as good days later. It would be a great cake to take to a party, it would travel well as it's in a 13x9 pan. I once brought a delicate cake, setting on a fancy plate, from NH past Boston, and after an extremely close call, almost rear ending another vehicle; I still don't know how that cake didn't end up all over the both of us.
Anyway, try this cake, it takes a boxed cake mix, so you know you can handle it, and it will look like you did a lot of work. I won't tell.
Ingredients:
1 boxed chocolate cake mix and the ingredients on the box
2 pounds (32 ounces) ricotta cheese
4 eggs
3/4 cup sugar
1 teaspoon vanilla
1- 5.1 ounce package instant chocolate pudding mix
1 cup milk
8 ounces Cool Whip
Preheat oven to 350 degrees.
In a large bowl, prepare the cake mix according to the directions on the box. Set aside.
In the bowl of a stand mixer, beat together the ricotta cheese, 4eggs, sugar, and vanilla until smooth.
Pour the cake batter into the prepared baking pan and use a spatula to spread evenly in the pan. Carefully pour the ricotta mixture evenly over the top of the cake batter. Gently spread the ricotta mixture so it evenly covers the cake batter. The layers will switch while baking so the ricotta moves to the bottom and the chocolate cake goes to the top like magic.
Bake for 60 minutes or until cake is set. let cake cool completely before frosting.
Once the cake is cool, whisk together the pudding mix until combined.
Gently fold the Cool Whip into the pudding until combined.
Spread the pudding mixture evenly over the top of the cooled cake. Cover the cake and refrigerate at least 6 hours before serving. I know, I know, its a long time, you can do it; just lick out the bowl real good and you will be ok.
Saving Money
I happen to come across this little chart last year, as I was wasting time online. As you know, vacation is very important to me, so I'm always looking for ways to put aside some money. This year thanks to this little chart, I have saved $1378. Yes!! I did!!
Now it's really simple, just save the allotted amount each week. Here is what I did though to make it easier. I did not follow the chart as it is listed. Yes, I started out the new year paying the small amounts, as after Christmas, my purse is very light. Once I had more money I would jump around the chart paying higher amounts. I knew I didn't want to save $52 the last week of December, so during the year I would pay those off. Once I put the desired amount aside (in the bank or somewhere it would not be spent), I would use a highlighter to mark off the calendar weeks numbers I had saved. I also highlighted the weeks I had paid on my desk calendar, so I wouldn't forget and get behind. It' a good goal or New Years Resolution, let me know what you are saving for! Good Luck!
Cranberry Shortbread Cookies
Ingredients:
1 1/4 cups butter, softened
1 cup powdered sugar
2 1/4 cups AP flour
1 6-ounce package craisins dried cranberries (I used reduced sugar ones)
Directions:
Preheat oven to 325 degrees.
Cream butter and sugar until light and fluffy. Mix in the flour, a little at a time, until combined. Stir in dried cranberries.
Cookies can be made into balls or flattened. to make round cookies, roll dough into 1-inch balls. Place 1 dozen on greased cookie sheets. Bake about 11-12 minutes or until edges are browned slightly.
Makes about 28 cookies
