this is probably my favorite tiktok of all time and I finally got around to showing it to my dad the other day and now he comes home every day and tells me about all the places he saw crumbling concrete and says "guess they didn't add enough chinchilla flakes"
My dad has worked in construction is whole life, primarily with a company that does concrete foundations, and I immediately sent him this back when I first found it on TikTok, and he IMMEDIATELY shared it with everyone he worked with. They apparently still quote it on his job sites to this day.
It's the first warm-ish day in ages and I've made iced coffee for the first time in ages. I've also updated my method for the "Japanese 7-11 iced coffee method" (under the cut).
This method flash-chills strong coffee as it comes out of the pour-over filter and uses the water from that ice to dilute the coffee and, because it's already cold, the ice in the glass won't water it down too much.
Reportedly, even 7-11 and other conbini stores in Japan and Korea use this method for iced coffee, hence the nickname.
Takes about 5-10 minutes total, generally
Needed:
A pour-over coffee maker
Kettle (electric or not)
Cooking scale, measuring in grams
Paper filter (if necessary)
Unground/whole coffee
Milk or cream, if desired
Directions:
Set up your scale, place the coffee vessel on it, and zero out the scale
Fill the bottom of your coffee vessel with 250g of ice
Measure 36g of unground/whole coffee separately and grind it
(If you coffee maker uses paper filters, rinse paper filter under cold water to remove papery taste, place in coffee maker)
Add ground coffee to filter and shake to level
Measure 275g of water separately on the scale
Heat water in kettle to 200F/93.3C. If you don't have a thermometer, this is generally when the water is starting to bubble but is not yet boiling
Place entire coffee vessel with filter, coffee grounds, and ice onto scale and zero out scale
Pour an initial 72g of hot water into the coffee to let it "bloom" and wait 30 seconds
After 30 seconds, add remaining 203g of hot water
Wait while the coffee brews. It will melt the ice and flash-chill the hot coffee.
Once the brewing process is done, remove filter and grounds from top
Pour chilled coffee into a glass over ice to taste; add milk or cream as desired
Here are my notes:
I often use pre-ground coffee so I use two and a quarter scoops but I'm not too precise about it
I generally boil more than 275g of water and measure the water on the scale as I add it to the coffee; I try to be precise with the hot water as I add it, but I would rather go over 275 by a gram or two than go under
I've also found I'd rather have more ice than less in the vessel; 260g seems better than 240g to me
If you'd like sweetener in your coffee, add it over the ice in the bottom of the vessel after measuring the ice; the hot coffee will dissolve it
