so I got into grad school today with my shitty 2.8 gpa and the moral of the story is reblog those good luck posts for the love of god

A few years ago, when I was living in the housing co-op and looking for a quick cookie recipe, I came across a blog post for something called “Norwegian Christmas butter squares.” I’d never found anything like it before: it created rich, buttery and chewy cookies, like a vastly superior version of the holiday sugar cookies I’d eaten growing up. About a year ago I went looking for the recipe again, and failed to find it. The blog had been taken down, and it sent me into momentary panic.
Luckily, I remembered enough to find it on the Wayback Machine, and quickly copied it into a file that I’ve saved ever since. I probably make these cookies about once a month, and they last about five days around my voracious husband - they’re fantastic with a cup of bitter coffee or tea. I’m skeptical that there is something distinctively Norwegian about these cookies, but they do seem like the perfect thing to eat on a cold day.
Norwegian Christmas Butter Squares
1 cup unsalted butter, softened
1 egg 1 cup sugar 2 cups flour 1 tsp vanilla ½ tsp salt Turbinado/ Raw Sugar for dusting
Preheat the oven to 400 degrees. Chill a 9x13″ baking pan in the freezer. Do not grease the pan.
Using a mixer, blend the butter, egg, sugar, and salt together until it is creamy. Add the flour and vanilla and mix using your hands until the mixture holds together in large clumps. If it seems overly soft, add a little extra flour.
Using your hands, press the dough out onto the chilled and ungreased baking sheet until it is even and ¼ inch thick. Dust the top of the cookies evenly with raw sugar.
Bake at 400 degrees until the edges turn a golden brown, about 12-15 minutes. Remove from the oven. Let cool for about five minutes before cutting the cooked dough into squares. Remove the squares from the warm pan using a spatula.
So I tried this recipe.
And it is GREAT.
It basically makes the platonic ideal of commercial sugar cookies, only in bar form. When I give them to people (which I do a lot, because this is one of those simple recipes where the results seem very impressive), I just tell them they’re sugar cookie bars.
Life hack: add white chocolate chips and sea salt
I made these today for the equinox with sea salt caramel chips and they are simply amazing. Let’s see how long they last with six people in the house!
Noting for later (as we need more butter for this, and probably won’t do a grocery shopping till the weekend).
The OP version of this has become my go-to cookie for basically all things and I have a whole cohort of friends and colleagues who would murder each other to get them. Haven’t tried any add ons yet, since the base recipe is SO GOOD.

Needed to make a dessert in a hurry to bring to Thanksgiving, and this recipe worked excellently. I did not have the right kind of sugar for the topping, so instead I used a packet of lemonade powder, which gave it a nice citrusy zing.

"how can i support my friend on the picket line?"
as the current strikewave continues to grow (hell yeah), it's more and more likely that even if you aren't in a union yourself (only 10% of workers in the USA are, roughly), you might know someone who is, which means you might know someone who is going on strike one day. if you are wondering how to support a loved one who is striking, here are a few ideas! this is non-comprehensive and based solely on my experiences going on strike in an urban environment in the USA. take what makes sense for your situation and leave the rest!
free space: whatever the union is telling supporters to do
nothing will help your friend/partner/family member more than the strike coming to a successful conclusion as fast as possible. follow the union's social media, check their website, or sign up for their newsletter. they will let you know what the most impactful actions will be. this might look like donations of cash, signing petitions, making phone calls, or showing up to the picket line in person. when in doubt, start there. for me, having friends show up to picket even for an hour or two during our toughest times made a huge difference.
food and water
i don't think i paid for food one time while on strike, and it was a huge help, both because i was exhausted and because, uh, i wasn't getting paid. this could look like bringing food to the picket line—we got lots of pizza and donuts, but any time someone brought something different or home made it was a huge morale boost. it can also look like making sure when your friend gets home from picketing, they can crash instead of having to go grocery shopping or cooking for themselves. takeout gift cards, grocery runs, meal prepping, snack packs—whatever makes sense for you and your loved one. also: hydration is key. a big pack of bottled water is never a bad thing to drop off at a picket line, regardless of the weather.
defense against the elements
speaking of the weather: it can be hell. no matter what season or climate, there are going to be struggles when people are outside all day long. are they dealing with heat? cold? rain? bugs? tangible objects can help (sunscreen, ponchos) but so can things like offers of transportation. i used public transit to get to my picketing shifts most of the time, but knowing i had a friend with a car i could call if it started pouring was a huge help.
protect the feet at all costs
when i did a shift of picketing i usually walked about twelve miles in an afternoon. that's no joke to do day after day after day. think about comfy insoles for their shoes; think about blister protection; think about epsom salts. i had friends who let me collapse in their nice bathtub a few times a week and just soak out my aches and pains. and i will be grateful to them forever.
protect the rest of the bod too
one of my favorite things anyone ever dropped off at our picket was a huge box of free covid tests. tests, masks, lozenges (you get sore throats fast when you're on a bullhorn every day), painkillers—these are great contributions if you have them floating around.
keep it fun!
morale is incredibly important. a lot of that will come from being on the line, but there are things friends and family can do too. be vocally supportive; share news about the strike with your own networks. tell your pal how proud you are of them. give them easy ways to recharge when they're off the line—playlists, streaming service logins, book recommendations. make sure they have roses as well as bread.
at the end of the day:
help them protect and nourish their body and mind
help ease the strain of day-to-day tasks that still need to get done
help them win
i hope that one day i will finally be ok….i’ll make a cherry pie when it is all over
