2 1/2 cups almond flour
1 cup unsweetened shredded coconut
1 tsp baking soda
1/2 tsp salt
3/4 cup light brown sugar (packed)
2 large eggs
1/4 cup plus 1 tablespoon coconut oil (melted not hot)
1 1/2 tsp vanilla extract
1/2 tsp almond extract
(Dark chocolate chips to melt for drizzle if desired)
Whisk all dry ingredients together until there are no lumps
Whisk eggs 1 minute then whisk together all wet ingredients
Mix wet and dry ingredients
Let sit in fridge for 2 hours
Preheat oven to 375°
Line 2 baking sheets with parchment paper. Place 2 tablespoons of dough 2 in apart on sheets. Press down on dough, cookies will spread very little when baking. Bake for 9 minutes or until edges are golden brown then move trays to cooling racks.
