I never thought that I’d see the day where I’d make something better than a banana icecream sundae, but this Banana Cream Pie with a 2 Ingredient Cookie Base is out of this world! Topped with chocolate and regular peanut butter sauce, I think we have a winner here folks! Unfortunately the cookie base isn’t visible in this photo, but trust me, it’s there 🍨

To make the cookie base, mix ½ a mashed banana with ½ a cup of regular oats, 1 tbsp of desiccated coconut, and a sprinkling of cinnamon until combined. Flatten into the bowl that you wish to serve your banana cream pie in and microwave for 1 minute or a until chewy cookie texture. Place bowl with cookie into freezer to cool quickly whilst you make the banana cream. Simply blend 2 previously chopped and frozen bananas in a food processor until smooth and creamy. Scoop this onto your chilled cookie base then make the peanut butter sauces by melting together 2 tbsp of smooth unsalted peanut butter, 1 tbsp of virgin coconut oil, a pinch of sea salt and a dash of natural maple syrup. Split the mixture and add 1 tsp of cacao powder to half of it, then drizzle both sauces over the ice cream. Press sweetened cacao nibs and coconut chips into the cream and eat to your heart’s delight! There’s probably a way to make it look much nicer but I’m all for a gooey, messy dessert 🐒 (at Pauanui Beach)
