Wanna ask the experts what exactly is the use of a POSIX in modern Linux. Is it just for scripting? Or are there other reasons to use it?
well, POSIX is just a standard for how UNIX-like operating systems (e.g. linux) should work. i'm assuming you mean a POSIX-compliant shell.
the reason you might want to use a POSIX-compliant shell is that those shells are mostly compatible with each other, meaning a script written in BASH is (mostly) compatible with a system running ZSH, and vice-versa.
if you choose to use a non-compliant shell, some scripts might not work correctly. for example, though "set -x VISUAL nvim" works in FISH, it won't work on BASH. although, most scripts include a "shebang" line that overrides the user's shell and chooses to run the script in a different one (e.g. BASH).
the reason you might choose a non-compliant shell is usually just out of convenience. FISH has built-in suggestions, completions, and highlights that don't use many resources (the same setup in ZSH would require multiple extensions that slow down the shell). FISH also has different syntax that you might find more intuitive than the POSIX shells. basically it's just a matter of whether you want convenience or compatibility.

Like I want to try it, but it doesn’t sound as fun if I don’t get to partition and format the drive and install my boot loader, all from the command line with no graphical system
Especially if the install environment is only available with GNOME, like some systems. Ew.
Oh no, not at all! There are ISOs with an installer but the 4 base ISOs, are just some shell you boot into and then you install away to your hearts desire!
They're different in the init the ISO runs but you can install any init with any ISO.
I personally never had to interact with the init during the installation, only after so to me it really doesn't matter, but I believe if you have to use WiFi you'll have an easier time with OpenRC, this is just some feeling though.
After installing you may want to add Arch Repos (see wiki), even though it's not recommended and the Artix repos are fairly big by now, some more obscure packages are still missing.
(And if you're at it already may I recommend the wondrous @fish-shell)
