The spicy BBQ Cauliflower wings I made tonight were 10/10. Served it up with butternut squash risotto, bread, and a mix of garlic, yellow squash, spinach, and shallot.
White cheddar chickpea (Bonza) mac n cheese with crushed tomatoes and turnip greens - topped with a little feta cheese and fresh crushed pepper! I ended up serving it with a piece of toasted naan. 👌🏼
I made this again the other day without feta, and even my husband said it was great (he is stingy food praise - all food, not just mine).
Breakfast! Wheat toast topped with guacamole and cheese egg, Quorn meatless sausage patties on the side. :)
I binged all weekend when we went on a trip with my inlaws. I've been doing so well and felt so great. Now I feel terrible in like every way. I'm hoping to get back on track tomorrow and feel less miserable. 😰😭🤢

Is a half-marathon the perfect distance? Everything I've read and heard convinces me that it probably is.
My low cal dinner tonight! I call it Fiesta Spaghetti Squash Casserole Layer of 1 whole spaghetti squash Layer of corn mixed with 4 tbsp Greek yogurt cream cheese Layer of refried black beans (or black bean dip) Layer of chipotle veggie sausage, peppers, onion, and spinach Layer of salsa Layer of cheese Bake for at least 20 minutes at 400 degrees I like to divide it into 3 giant servings (I'm talking huge), but you could easily do more smaller servings.
Do you ever create a dish and think “yes - this is it. With this food I have out done myself and have created something amazing.” That’s how I feel about this squash bake/casserole that I made.
I listed out the ingredients from MFP. It was fairly easy to prepare, though does take a while for bake time.
Instructions: Cut squash lengthwise and remove guts/seeds. Add to a large glass casserole dish with cut side down; add a small amount of water to assist with steaming. Bake at 400 degrees F for 45 minutes.
While that is baking, chop up the pepper and onion and fry them with no/minimal oil/spray. Add the fake chorizo and warm it/mix in with the pepper and onions. When the squash is almost done, microwave the corn until it’s warm (3 minutes approximately). Mix the vegan cream cheese in with the corn to create a creamy mixture.
Once the squash is ready, scrape out the noodles into the bottom of a smaller casserole dish. On top of this, layer the corn mixture. On this layer add the pepper/onion/chorizo. Next, layer on the bean dip. Top the beans with salsa, then finish off with cheese. To make it totally vegan, skip the cheese or use a cheese sub.
Bake again at 400 F for 20 minutes. I divided this into three even portions. I could not be happier with how this turned out! The only down side is the very high sodium content - next time I’ll try to find a lower sodium salsa!

It is. It has to do with the way our bodies network fat. Female bodies create sort of a mesh network to support fat (female bodies are MUCH more hardy in times of stress) and it can present as delightfully lumpy. More than 90% of women have visible cellulite, but all women store fat in this manner.

Here’s an illustration of the aforementioned difference in fat storage.
Men’s lattice pattern collagen threads holds subcutaneous fat in a way that, when the skin expands because of the fat storage, it expands evenly. Women’s “pockets” expand unevenly when we accumulate fat, creating that orange peel effect. Our storage pattern means we can healthily store more fat than men. Like a woman with 25% body fat is average, a man with 25% body fat is chubby. Because of that, like OP said, women are hardier in times of stress or famine. It’s also one of the reasons why our bodies can survive pregnancy, which is a massive energy demand on our system.
And there’s absolutely NO “treatment” for cellulite that will work. They are all bullshit designed to separate you from your hard-earned cash. It’s a secondary sex characteristic, it’s perfectly normal and it’s not going away no matter what you do. Like I’m very lean myself and I work out 5~6 times a week, and I still have cellulite. Someone giving a woman shit for having cellulite is akin to giving her shit for having skin. It’s just a mixture of misogyny and corporate greed.
Love your lumpy skin, ladies. It means you are a badass surviving machine shaped by millenia of evolution.

I just wanna say that I found a bundle of 7 still-green bananas at Jungle Jim's today for $0.79. That's like 3 lbs of banana for $0.79. So this is what the highlight of my day is like now.

I first read this as "what do I want do I really really want?"
And I was ready for a spice girls themed self love post.
There is something wrong with my left leg (the sports medicine doctor isn't completely sure what), but I haven't run really in 4 weeks. I feel fat and unhealthy and lazy and unhappy. I need my endorphins. I need to feel confident in fueling my body rather than feeling like I'm just loading myself up with calories that I don't need.
Breakfast! Pumpkin Greek yogurt with pumpkin seeds, shredded coconut, and a graham cracker! ❤️
