Mashed Sweet Poatoes
This may seem a little basic for an entire post, and definitely shouldn’t be considered a full meal, but we will constantly refer back to this page as a side dish/carb to go with several other recipes. It also can stand as a dessert with the right toppings, and my training partner tells me it’s perfect with fried eggs with breakfast. Either way, it is versatile and always a good thing to have prepped.
To get the sweetest mashed sweet potatoes without adding any sugar you just have to cook them at a low temperature for as long as possible. I don’t do any wrapping in foil or coating in olive oil. I just throw them on a pan and into a cold oven. The time they spend in there warming up helps prolong the cooking process, converting more starch into sugars.
Ingredients:
5 lbs Sweet Potatoes
¼ lbs Butter
½ tsp Cinnamon
Instructions:
Put sweet potatoes on a baking sheet and into the oven, then turn the oven to 275 f.
Roast until the potatoes are soft all the way through (squeeze with your fingers, you’ll feel a solid core if they aren’t ready yet) expect roughly three to four hours.
On the stove, melt the butter with the cinnamon in a saucepan on low heat. It’s tempting to jack the heat up to speed things along, but don’t. You’ll burn the butter.
Pull potatoes out when finished and peel the skins off while they are still hot, but don’t burn yourself. It is key though to peel them while they are still warm because the skin is literally steamed away from the insides, making the process much simpler.
Mash potatoes with a whisk or fork.
Mix in melted butter. Season with salt a little at a time, tasting regularly. Seriously. Keep tasting.
Reheating/Serving:
Reheat on medium on the stove in practically any pan, stirring regularly. You also can crank the heat to medium-high, form the mix into patties and crisp the sides in a nonstick pan with oil to make sweet potato cakes.
Adding roasted/crushed walnuts, pecans, or hazelnuts is a great way to get in more calories.
Melt marshmallows over top in the oven at 350 and drizzle with maple syrup and walnuts for a dessert.

Spanish Tortilla
It seems fitting to start this all of with a breakfast recipe. Read any article on bulking and you will constantly read and reread that the real battle is in the kitchen, not the gym. Eating enough to hit a caloric surplus can be extremely hard for many, not just in the physical amount they have to eat, but also in the time involved to prepare meals. The longer it takes each individual meal to prepare, the less chance you have of eating enough. This is especially true with breakfast, you’re half awake and usually in a rush, resulting in inadequate meals if any at all. This recipe will change everything.
Spanish tortillas are not a “tortilla” as you know at all. They are an egg and potato dish with a never ending flavor potential. The basics are thinly sliced, precooked potatoes baked in scrambled eggs in the shape of a pie, with any flavor you want to add in. Think bacon, sausage, cheese, herbs, vegetables, spices, or really anything you want it to taste like. They are typically served room temperature and not necessarily for breakfast, but to an American they are essentially a premade, no reheating required breakfast. Besides eating it for breakfast, the Spanish will also hate me for using an over. The classic recipe calls for the recipe to be cooked in a pan until set, then flipping out onto a plate before being slid back into the pan to cook the other side. Instead we will cook it until it is just barely set, but then finish it in the oven. Then you wait until it is cool and only have to flip it out once.
For this recipe today, I did a simple breakfast sausage and onion tortilla. But, really feel free to try all sorts of different flavorings, including those that don’t immediately scream breakfast.
Ingredients:
12 eggs
4-5 yukon gold potatoes
1 lb breakfast sausage
1 onion
1/4 c olive oil
deeper nonstick pan or well seasoned cast iron skillet
Instructions:
Preheat oven to 300 degrees fahrenheit.
Halve the potatoes, then slice anywhere between 1/8” to 1/4” thick, trying to stay consistent. Cook with olive oil over medium heat until potatoes are all soft, you will have to delicately stir and rotate them around in and out of the oil or just cook in batches. Add a pinch or two of salt while stirring. When finished separate potatoes and oil with either a plastic slotted spoon or with a colander inside another bowl to catch the oil. put aside in separate bowls.
Start to cook sausage in the pan while regularly stirring and breaking any clumps into smaller pieces. While the sausage cooks slice the onion thinly, add to sausage once the fat starts to render. Cook both until sausage is browned and onions are soft, mix into bowl with potatoes and allow mixture to cool.
In a separate bowl large bowl, whisk all eggs with a pinch of salt and black pepper (however much you like). Pour potatoes, onion, and sausage into eggs and mix thoroughly.
Add the olive oil from before into the pan and over medium heat. Pour the mixture in and cook until the sides set (if you lightly shake the pan the center will jiggle, but right along the edges won’t) and then stick it in the oven. Cook until the center is loosely set (push down on any piece of potato that is towards the center, it should be set in place but still move slightly to the touch).
Remove from oven, and allow to cool. To flip out put a cutting board on top of the pan, and holding both flip it over. Remove the pan, slice into pizza shaped slices, and store.
Reheating/Serving:
Tortillas can be eaten cold, at room temperature, or reheated. A few minutes in a 350 degree oven or a minute or two in a microwave should be all you need if you prefer them warm.
A light drizzle of finishing oil and coarse sea salt is all you need past that.

1. Eat a lot of food - I mean A LOT. Just when you felt like you ate enough....boom, you find out you were wrong. You need to eat more than that. And later, you will eat more than that. You'll need to repeat this many more times throughout the day. Then you'll need to do this the day after that, then the day after that. 2. Go to the gym and do basic exercises - Basic exercises means squats, rows, lots of various barbell presses, dips, chins, etc. You can't shape muscles and you can't accidentally fall into being jacked and swole to a degree that stops traffic. So if that isn't your goal, don't worry, it won't happen. 3. Don't do the routines you see them doing RIGHT NOW - That dude you see in the magazine whose chest you want? He probably built that chest doing normal shit and has great genes for it. He's not giving you his routine because that was the one that turned his bird chest into two slabs of beef. Don't emulate a guys routine because he's strong and jacked and does 14 sets of cable crossovers. When you are in doubt of what to do, see rule #2. 4. If you want bigger arms, get bigger overall - Doing endless sets of curls when you're 145 pounds isn't going to give you 19" pipes. What bros won't tell you is, you have to get bigger OVERALL to get those big pipes. Do arm work yes, but doing arm work and avoiding rule #1 and rule #2 won't get you arms that look like legs.
5. Sleep is your biggest "recovery aid" - If rule #1 is the prince of recovery, then sleep is the king. Especially if you don't rely on "biological recovery" tools. When your body is trying to grow it needs sleep to allow this growth cycle to happen. It might not be as fun as blasting Ecstasy at that awesome rave they throw every weekend down in that deserted building, but since you're 145 pounds with 11" pipes, you're not getting laid there anyway. Might as well stay home, have a good jerk, and save a few bucks and avoid a potential night in the slammer. Get to bed at the same time each night and make sleep an important part of the whole training pyramid. 6. Don't be a vegetarian, and REALLY don't be a vegan - Just because you know "that one guy..." that looks pretty good and doesn't eat meat doesn't mean shit. Meat has a richer amino acid content and that means more muscle. This may piss some vegetarians off but you can't beat all the studies that back this up. Also, the last thing you want is nutrient deficiency on your trip to swoleville. Eat meat, and make sure you eat red meat a few times a week. This will piss off the vegetarians, but they are usually pissed off about something anyway. 7. You can't get big and ripped at the same time - Getting big requires a calorie surplus. Getting ripped requires a calorie deficit. While you can lose SOME bodyfat while you gain SOME muscle mass when you start training, that phase doesn't last very long and you'll spend the rest of your training life needing to decide which one you really want to do. Unfortunately, most guys get caught in no mans land at various times, and end up "skinny fat" for periods of time because they are trying to ride two horses with one ass. Decide if you're trying to get bigger and stronger, or trying to get lean. They aren't like peanut butter and chocolate; two great tastes that go great together.
8. Train for a very long time - If you want a body that looks like it took 10 years to build, it's probably going to take 10 years. It may take 15 years. If you're one of the lucky ones from a genetics standpoint....it will still take 5-8 years to build that 10 year body. 9. Try not to get discouraged - If you hang in there long enough you're going to have periods of disappointment because of a lack of progress. It's hard not to get down on yourself when this happens. Try to remember the times progress was awesome, and remind yourself that nothing in the present is permanent. The gain train will return to Smallville and eventually get you to Swoleville IF you just don't fucking quit. See rule #8 again. 10. Realize there are no "secrets" - Everything above is common knowledge once you've been at this shit long enough. The problem is, common knowledge isn't as common as most of us would like, and the "I want it now!" mentality often rules the day. Stop chasing "that one secret trick" bullshit and read back through this if the urge to do that hits you.
Strong people are harder to kill than weak people and more useful in general.
