2-YEAR CHEDDAR

I usually try to review cheeses virginally - that is, ones that I’ve never had before. In this case, this is a cheddar I’ve had many times before. But I couldn’t leave it off the blog, what with its obvious appeal to leather and rubber fetishists.
As far as cheddars go, Grafton’s 2-year aged isn’t going to shock you. It’s mild, light on the salt, with a slightly sweet and grassy flavour. It’s got a nice texture. It’s dense, more moist than I expected, and smooth.
So what is the deal with the gummi suit on this cheese anyway? Well, cheese has obviously been around a lot longer than fridges. Fresh cheeses like mozzarella are too moist to last very long outside of a cold place (bacteria and fungi do so love damp places), though I don’t think anyone was too mad about eating that stuff quickly. But cheeses that have been aged (and dried) more have some more preservation options, which is where cheese wax comes in. The wax is a physical barrier, stopping fungal spores from landing, and also blocks moisture and air, making the cheese a pretty unfriendly place to grow. Even drier cheeses can be bandaged in cheesecloth and then slathered in lard to preserve them while allowing some ventilation.
I gotta admit: hot wax isn’t really my thing. But cheesecloth bondage and grease… it has potential.

F: Franzesca Ostermünzer, age 9. Lynx. Daughter and eldest child of Baron Dietmar and Freiin Anna. Born and raised at the castle. Franzi is headstrong and wilful, but intelligent for her age, with a particular skill for the French language.
Her young serjeants, V: Vesna, age ~7. Wolf. A cheerful child who loves her charge dearly. She more or less does as she's told, and is liked around the castle. Prefers eating cheese and apricots to working. She was brought to the castle from near Třeboň as a very young child, and taught German there.
S: Snježana, age ~7. Wolf. A quiet child who doesn't offer many opinions or complaints. She works harder than Vesna and they have become close friends. Though she was also brought to Swarzctannberg as barely more than a toddler, she still understands her native Czech.
D: Dietmar von Ostermünz, age 33, Lynx. Baron of Swarzctannberg and its lands. Born at his family's seat near Innsbruck, he moved to Swarcztannberg with his father as a young man, seeking to fortify the old castle and expand Austrian influence northwards into Bohemia. As boisterous and proud as any lord, Dietmar loves nothing more than hunting. Not sharing many lords' distaste for the Kaiser, he sees himself as a loyal man of Friedrich II.
H: Hartgar, age 31, Dietmar's serjeant. Stag. Also from near Innsbruck, Hartgar has been serving his lord since he was a youth. Obedient and mild-mannered, Hartgar enjoys drinking and hunting. He dislikes having to teach Vesna and Snježa swordplay, finding it a little demeaning.
Volkher Hackenperger, age 30, Dobermann. From a family of minor nobles, originally ministerials, he has always been a close friend of Baron Dietmar and now serves as his castellan. A passionate knight who loves music, dance, swordplay and, when possible, men.
A: Freiin Anna Ostermünzer, age 41, Lynx. One of eight sisters from a noble family near Titamanning, she was betrothed to Dietmar unusually late, and only met him for their wedding at Swarzctannberg even later. Life on their isolated castle has been hard on her, and the difficult births of Franzesca and her son Reinhardt have left her melancholic and ill-tempered. Recently she has been beset by an illness she cannot seem to shake. She detests half the people in her life openly, and spends most of her time with her Serjeant, Resa, whom she tolerates.
R: Resa, age 42, Wolf. Utterly devoted to her Lady Anna, despite having been injured in her defence as a young woman, leaving her short one eye and half her face paralyzed. Resa loves Anna and Franzesca, and is coldly courteous to most everyone else. Servants go in terror of her, not only because of her frightful appearance, but because she seems to thrum with imminent violence when annoyed. Even if one could be initiated, she wouldn't know how to hold a conversation well. The fiercest fighter by far at the castle.
