Vegan Potato Leek Soup
Perfect for the holidays & ultra cheap
INGREDIENTS:
-3 Large leeks
-2 tbsp vegan butter or oil
-4 cups vegan chicken broth or vegetable broth
-2 lbs of potatoes, diced into 1/2 inch pieces
-1/2 tsp thyme
-1 bay leaf
-Garlic powder, black pepper, and salt to taste
METHOD:
-Clean & cut the leeks into 1/4 inch slices
-Saute leeks on low heat in a pot in butter/oil to soften (about 10 minutes)
-Add broth, potatoes, and spices, cook (covered)
-Bring to a simmer on high heat, then lower heat to a medium to maintain a low simmer. Cook for 20 minutes, or until potatoes are fully cooked.
-Let cool for a bit, then blend the soup in a blender.
