EXPLANATION;

Arthur is so quick to hire John because no one else has come to accept the offer he's put out- also because he wants to change the topic after "embarrassing" himself with his outburst about what John's last name is (its also why he drops it so quickly)

John got that defensive because he believed he had been caught and he was trying to emulate that intimidation thing he had heard Arthur do so many times when backed into a corner
