Yesterday's Lunch scene - a simple vrat wala Odia lunch... it was Akhaya Trutiya and so no onions or garlic were to be used. The food items on the plaintain leaf include arua arna (steamed rice), dalma (an odia speciality prepared from vegetables and lentils), koshala saaga bhaja (steamed and seasoned amaranth leaves with badi and chopped potatoes), alu bharta (mashed potatoes given a ghee and cumin seeds seasoning) and kakudi salad (cucumber tomato carrots salad). Snowy and Gungun resting after returning back from their routine evening walks. Last evening I made Rasaabali - A not-to-miss Dessert from the Land of Odisha.. it was my second attempt & it came out exceedingly well. Freshly prepared Cottage cheese or "chenna" is an indispensable part in the Odia sweet making process and is generously used in almost all of the sweet dishes in the state like for instance in Rasaabali (the precursor of Rasmalai). One may say that Rasaabali is a distant cousin of Rasmalai but they are still slightly different from each other in that in case of Rasaabali, the chenna balls are deep fried before being left to soak in thickened sweet milk.ย Rasaabali originated in the Baladevjew temple in Kendrapada where it is offered as a prasad to the deity. It is also offered to Lord Jagannath in his chhapan bhog, thus the sweet dish has been existing since 11th century. Snowy outside the Vet's clinic. All of his vaccinations (Anti rabies as well as 10 in 1 vaccine i.e. vaccine against 10 diseases like canine distemper, parvovirus, coronavirus, parainfluenza, hepatitis, adenovirus, kennel cough and a few others) for this year got done today. Last month on 10th of March the first set of 10 in 1 vaccine and the Anti rabies vaccine were given and today the second set of those vaccines were given. Hopefully the guy who has assured me that he will adopt Snowy, will keep his word and will come this evening to take him. Fingers crossed. All that these pawed beings need is care and affection and in return, they would give back its double for sure. Out of the 5 kids, until now only one - Zuro - has been successfully adopted and he is living happily with his new family. It has been difficult looking after 5 kids all alone but Apne bacho ki tarha paalaa hai, I do not want to leave these kids stranded on the street to fend for themselves. I had lost faith on God last October... Aalu Kasha (Boiled Potatoes cooked in Dry Gravy) Mummy makes the world's best Aalu Kasha, I tried to replicate the same taste following her recipe step by step but I have a long way to go to match that taste ๐. Aalu Kasha, commonly prepared in almost all the Odia and Bengali kitchens is a simple and yet delicious dish, that is prepared with potatoes and the Indian species. The recipe follows the standard procedure that is employed for the gravy of most Indian curries, however the only difference being that the gravy remains semi dry in case of Aalu Kasha. This dish doesn't require that much effort to prepare, gets done in relatively less time, and tastes really good whether one pairs it with luchis (maida puris) or with the paranthas or rotis. It goes well even with steamed rice and dal. Dal Tadka is one of the most common and also among the most popular dishes ordered in dhabas and restaurants across India, but primarily in the Northern part.ย Now the the tadka dal prepared the Odia way is vastly different from the Dal Tadka made elsewhere, in that while others primarily use channa dal (split chickpeas) to prepare Dal Tadka, the Odia dhabas and restaurants use a medley of pulses namely Channa dal, Kabuli channa, Rajma, Lobia, Masoor dal and sometimes urad dal too. No wonder, both the taste and the flavour of the Odia style Tadka Dal is different from the one prepared elsewhere. The procedure is quite simple - first all the lentils are boiled in a pressure cooker with turmeric powder and salt. Now for the seasoning, heat about 1 tablespoon of mustard oil in a wok, fry slit green chillies, sliced onions and finely chopped tomatoes. When the tomatoes get cooked, add about a tablespoon of ginger-garlic paste (while preparing the paste, also add cumin seeds, coriander seeds and 2-3 red chillies too to the chopped garlic and ginger) and cook till oil starts to leave the sides. Now add the mixture of the boiled lentils. For a change, last night I thought of replacing my usual dinner of rotis and a sabzi with South Indian food items and the first thing that came to my mind were idlis. So I decided to make Idlis to go with sambar and coconut chutney. But I also gave a little twist to the usual idlis in that I added steamed vegetables like chopped carrots, green peas and chopped cauliflower florets to the idli batter. Aalu Soyabean curry - a gravy based curry of Soya nuggets with cubed potatoes (or rather "mealmaker tarkari" as we used to call it) has been one of my most favourite dishes since childhood. In fact we used to call it "Kalija Tarkari" or "Kaleji Tarkari", owing to its close resemblance to the chicken liver. Like all other dishes, mummy was an expert in preparing the world's best Aalu Soyabean curry ๐๐ That taste still lingers on in my mouth as I recall those Sunday lunch scenes. Simple is wonderful. When I was a child, I was quite fussy about eating vegetables. Therefore every now and then, Mummy would combine a vegetable with the lentils as I loved eating dals. Mooli arhar dal was a regular side dish at our home during the winters. And even someone so fussy like me loved the Mooli arhar dal. So today while I was preparing this dal, it brought back those memories ๐๐ค The preparation is very easy and doesn't take much time - first of all the arhar dal is washed thoroughly and the water is drained out. Similarly 3 to 4 radishes are washed clean and then if one prefers, he can remove their outer skin as well. They are then cut into long pieces of about three inches length. Adding water into the pressure cooker, the washed lentils and the cut radish pieces are put into the cooker. Salt and turmeric powder are then added and the lid of the cooker is closed, letting them to cook for until two whistles.ย They are then given a simple seasoning of, asafoetida (hing),ย cumin seeds and red chillies in desi ghee. A pinch of powdered roasted cumin seeds and red chillies is then sprinkled over the dal. Finely chopped coriander leaves can also be sprinkled over the dal to enhance the taste.
