Amending my previous statements about chongqing hotpot. It is as good at home if you use a good hotpot base. I am linking the good hotpot base. The same brand has one that’s separated into 4 squares and it is NOT as good. Idk why, it’s not spicy enough. Use this knowledge for good please.

Cheating Noodle Soup is what you do when you want chinese noodle soup but don’t want to spend like 20 years frying chilis but DO have leftover hotpot base. Amounts for 2 people

1/8 of a thing of hotpot base

Hotpot ingredients you want in soup

Aromatics (scallion, garlic, ginger, bean paste, whatever you have/want)

Vegetable Oil

Noodles (for 2 people)

Sesame oil (~2 tsp)

Soy Sauce and vinegar (preferably black vinegar)

Scallion and/or Cilantro for topping

Boil like a quart of water with hotpot base. While boiling, prepare a second pot/wok with a turn of vegetable oil over medium heat. Cook aromatics until aromatic. When the base has dissolved, add a few ladlefuls of base to the wok and shut off the heat. Add ingredients to the boiling pot one at a time, in order of cooking time (save noodles for last). As they finish cooking, move them to the wok.

When finished, add ~1/2 hotpot liquid, 1/2 water to the wok until the soup reaches your desired soupiness. Add sesame oil. Season with soy sauce and vinegar to taste, plus salt and brown sugar if desired (go slow). Serve and top with chopped cilantro and scallion.

Motivation: Spicy hotpot base on its own is prohibitively oily and spicy, sichuan chinese noodle soups require like ten years of frying chili oil before hand. If you don’t wanna do that you can get the deep spicy flavors from the hotpot base, and add some brighter, fresher soup flavors from your aromatics. This probably works with other kinds of hotpot bases too but I don’t have those only the spicy one. Good luck in all your endeavors.
