With crispy sesame-coated tofu served over fluffy brown rice and fresh mixed vegetables, sesame crusted tofu bowls provide a delightful combination of flavors and textures. These bowls are savory-sweet and packed with nutrients, making them ideal for a flavorful, quick meal. They also have a hint of Sriracha.
Ingredients: 1 block firm tofu, pressed and drained. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon sesame oil. 1 tablespoon honey. 2 tablespoons sesame seeds. 2 cups cooked brown rice. 2 cups mixed vegetables such as broccoli, bell peppers, carrots. 2 green onions, sliced. Sriracha, to taste. Salt and pepper, to taste. Cooking oil spray.
Instructions: Set the oven's temperature to 400F, or 200C. Cubes of the pressed tofu should be cut and put in a bowl. Mix the soy sauce, rice vinegar, sesame oil, and honey in a different small bowl. After adding the sauce, toss the tofu cubes to ensure even coating. To coat the tofu, sprinkle sesame seeds on top and toss once more. Arrange the tofu cubes in a single layer on a baking sheet that has been sprayed with a small amount of cooking oil and lined with parchment paper. Bake the tofu for 25 to 30 minutes, rotating it halfway through, or until it becomes crispy and golden. As the tofu bakes, prepare the mixed vegetables by steaming or stir-frying them until they are tender, and cook the brown rice per the directions on the package. Tofu with a sesame crust, cooked rice, and mixed vegetables should be divided among serving bowls. Add sliced green onions on top and pour Sriracha over it. To taste, add salt and pepper for seasoning. Enjoy while hot!
