Spicy Indian Potatoes with Cilantro is a tasty and fragrant dish that combines the earthy tastes of potatoes with the heat of Indian spices. The freshness of the cilantro makes the dish balanced. Along with rice or bread, it's a great side dish or even a main dish.
Ingredients: 500g potatoes, diced. 2 tablespoons vegetable oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 green chili, finely chopped. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric powder. 1/2 teaspoon chili powder. Salt to taste. Handful of fresh cilantro, chopped.
Instructions: In a pan, heat the vegetable oil over medium heat. Put in green chili, chopped onions, and minced garlic. Cook the onions until they become clear. Put in the diced potatoes and mix them in well. Put salt, ground cumin, coriander, turmeric powder, chili powder, and coriander powder on top. Mix the potatoes so that the spices are spread out evenly. Cover and cook for 15 to 20 minutes, stirring every now and then, until potatoes are soft and fully cooked. Add freshly chopped cilantro to the potatoes after they are cooked before serving.
