roasted pumpskin seeds from scratch! bc i rlly don't like waste (also i'm kinda broke), i like making full use of everything. these were kinda tedious to make, though. after clearing the seeds from the cavity, u gotta wash the guts off the seeds (q difficult bc those things are sticky). then u have to boil then simmer these for 10mins, dry them (this part took rly long bc the seeds stuck to the paper towel and i had to manually peel each n every one off, and i cant imagine using a towel (seems dirty to me). lastly, they're tossed w oil n salt then roasted for abt 30min til crispy!! despite all these, i'd still do this again :-)
10 min mug cinnamon roll! nothing really "healthy" about this, but surprisingly these left me SO full and satisfied for HOURS (or i was just having bad appetite). i will try this again but with less sugar, maybe this can go from 300cal to even 250 or 200!
thick kinda fluffy banana oatmeal pancakes (w only 3 main ingredients: eggs, bananas and rolled oats!) i've realized that the secret to thicker healthy pancakes r baking powder and also using extra thick rolled oats (from bob's red mill). when i thought banana pancakes couldn't get better, they did!! 😍
attempt at steamed mantou today!! the yellow-orangey swirl is pumpkin flavoured :-)) the taste was not bad!! next time i’ll try again better tho – things to take note of/improve on: timing the fermentation of the 2 doughs (plain & pumpkin respectively) so when the pumpkin dough is done rolled out, the plain one is just nicely ready to be worked with!! also i realized in hindsight that i rolled the dough up along the length instead of the breadth of the rectangle, so the swirl wasn’t as pronounced as i hoped.
anyway, it’s all right – there’s always 2nd tries (and even 3rd, 4th and 5ths and so on) to get better n improve!!! 😊😊😊 we can’t be expected to be perfect on our first tries.

i didn’t have the best eating day today. my appetite was low and this is the first day of the past 75+ days of my diet that i’ve actually FORGOTTEN to eat.
i woke up around 11am and my first meal was around 1pm or 2pm, i suppose - 80cal of pumpkin. and i drank some milo at maybe 3? which was around 60cal. and i havent taken in much if not any protein so far. then my next meal was around 4pm, where i made mug cinnamon rolls (300cal) which was superrrrr high in sugar and this SURPRISINGLY left me soooo full that my next big meal was at 9+pm. in between that i simply ate some pumpkin seeds i was roasting. (70cal?) then my next meal was at around 930pm – i ate 3 eggs, 2 slices of toast and tuna (500cal). i wasn’t even hungry and i simply ate because i didn’t want my body to lack energy (tho i felt super energetic). and to my surprise, at this moment, i still had about 450 cal left for the rest of the night?? i didn’t even think about eating, like i usually did almost everyday. this made me realize how much i thought about eating every day other than today. i realized i literally count the hours til i get to eat again bc i just wanna eat. but i never let myself think i’m hungry bc i’m in denial or something. makes me wonder if i’m actually putting enough food in my body or i’m just dieting like crazy. makes me wonder if thats the reason why my period hasn’t come. makes me worried, bc all i want is to be good to my body and to nourish it with the food it NEEDS, not any less. (tho i wanna lose about 1kg more). and so after that 930pm meal, i realized i was low on my protein intake, so at 1130pm i chugged 45g of protein powder dissolved in water (pictured^) and it felt kinda disorientating and gross and not right….. now it’s 335am and i’m fking wide awake in bed. and i gotta get up in 3 hours for an important meeting…. i rlly needa stop and evaluate this for a moment. :(
