Almond Butter & Oatmeal Cookies/Bolachas de Amêndoa & Aveia
(English)
Ingredients
Yield 12 cookies
Total time: 40 mins – Prep: 20mins + Bake: 12mins + Cooling: 8mins
1⁄2 cup butter, softened
1⁄2 cup almond butter (chunky or creamy)
3⁄4 cup packed brown sugar
1 egg
1⁄2 teaspoon vanilla
1⁄2 teaspoon salt
1⁄2 teaspoon cinnamon powder *Optional
1⁄2 teaspoon baking soda
1 1⁄4 cups rolled oats
3⁄4 cup whole wheat flour
1⁄2 cup chopped nuts and/or seeds (almonds, peanuts, walnuts, sunflower seeds) *Optional
Directions
Preheat the oven at 350º F (180º C)
In a large bow combine the softened butter and almond butter.
I measure the almond butter by packing it tightly into a metal measuring cup. Then I scrape it out with my fingers.
Add the sugar and the egg to the bowl.
Mix it up really good (ideally with a wire whisk) until it is smooth, fluffy and glossy.
Add the vanilla and stir it in a little. This will somewhat harden the mixture.
Add the salt, baking soda, oatmeal, and flour.
Stir it all up really well. You will need a spoon to stir in these dry ingredients. A whisk just won't work for this part because the batter is so thick.
If you are adding nuts or chocolate chips, fold them in last when the dough is done.
Drop the dough by the spoonful 2 inches apart onto an ungreased cookie sheet. No need to line it with parchment paper.
If you want flatter and crunchier cookies, press the top with a fork before baking.
Bake at 350°F (180º C) for about 12 minutes, until the bottom starts to darken.
Remove from the oven and let it cool for at least 8 mins before removing from the cookie sheet with a spatula.

Ingredientes
Porção 12 bolachas
Tempo: 40 mins – Preparo: 20mins + Assar: 12mins + Esfriar: 8mins
Directions
Preaqueça o forno a 180º C
Adicione o sal, bicarbonato, aveia e farinha.

Praia de Pedra do Sal - Parnaíba, Piauí (by Márcia Santos)
Lagoa do Sobradinho - Luís Correa - Litoral do Piauí
Piauí has the shortest coastline of the non-landlocked states of Brazil. It is 66km long (about 40 miles), and it can bring many surprises to its visitors.
"Most countries would consider an ecosystem like the Parnaíba River Delta to be their Crown Jewel. In somewhere as blessed as Brazil, it is overlooked. This is an environment of international significance." (https://sites.google.com/site/piauibrazil/parnaiba-river-delta)
