fully aware this isn't the prettiest food post on the planet BUT it might be one of the most simply satisfying delicious snack posts. Mushroom Crisps: thin slice 🍄 mushrooms, using #local @hamakuamushrooms here but #shiitakes work great too. Generously rub with #coconutoil & sea salt. pop into 400F oven for 40 minutes. flip the shrooms after 29 minutes to get both sides brown. You want them crisp and just this side of burnt. oh, this salad! so bright, like summer on a plate. sugar snap peas, tomato from my garden, chives, lots of fresh torn mint, shaved Parmesan, bacon and a Meyer lemon 🍋 garlic dressing. the trick to the dressing is blend a whole meyer lemon in 2 cups of olive oil for the base. yes, you read that right...lemon peel guts everything into the Vitamix. use 1/4 cup of the lemon oil with 1 cup OVOO, juice of 1 lemon, 8 cloves of garlic (not a typo) & sea salt. try it and let me know how you use the magic lemon oil. #janaland #mauiprivatechef #maui #organic #localicious (at Chef Jana McMahon, Maui Private Chef)
