How I made my gingerbread cookies without getting my hands dirty. Kind of.

What you’ll need:

500 g flour

1 tsp baking powder

1 tsp baking soda

3 tsp ground ginger

150 g butter, softened

175 g brown sugar

150 g honey

1 egg

Instructions:

Sift together the flour, baking powder, baking soda, ginger; set aside.

In a medium bowl, mix butter and sugar; then add honey and egg - until smooth. Gradually stir in the dry ingredients, until they are completely absorbed. Divide dough into 2 pieces, pat down to 1 ½ inch thickness, wrap in plastic wrap and refrigerate overnight - if you can’t, leave it to rest for at least 3 hours.

Preheat oven to 180 degrees C (350 degrees F).

I don’t flour my surface; this is how I roll 😎

I like to roll the dough between two eerm… cable raceway covers (my dad gave me those, they’re exactly 5mm thick as I wanted) for even thickness and sandwiched between two pieces of parchment. This yields a perfectly even sheet of dough for cutting - and your hands are clean 😏

Roll the dough out, cut into desired shapes with cookie cutters, and place cookies about 1 inch apart onto an ungreased cookie sheet.

Then I remembered I ordered these Star Wars cookie cutters for @titled-un ‘s birthday and still haven’t tried them - why not now. Everyone’s talking about SW now anyway.

I know cutters like these are usually used for fondant, but I like how these turned out :)

NOTE: My cookies were about 5 cm (a bit less than 2″) wide, and 5 mm (0.2″) thick - I found the best baking time on 180 C (350 F) is between 6 to 6:30 minutes (it’s ok if they feel a bit soft when you take them out of the oven, they’ll harden as they cool). Hope this helps!

Service dog owner pro tip; never approach a service dog when he/she is working, or complain about why there is a dog in the area or where you are. Or run up to a service dog and try to distract it or tell their handler how cute, or how adorable the dog is. I as a handler have had small children run up to my dog when he is working and pet my dog, and have their parents get mad when I tell them the dog is working and cannot be petted. You wouldn’t pet a person’s wheelchair; or their oxygen tank would you? THEN DON’T PET A SERVICE DOG!!!! Some handlers do allow it some don’t RARELY do I allow it. Also NEVER whistle or yell at dog, when he is working, the dog more or less will ignore you and focus on its handler. Many dogs are trained for different or several tasks, but please DO NOT DISTRACT A SERVICE DOG IT COULD MEAN TROUBLE FOR THE HANDLER!! Also we do not work our dogs to death as soon as they are home they do have their off hours ^_^
