Crispy Cauliflower & Cheese Bites
1.Preheat the oven to 200 degrees Celsius / 400 degrees Fahrenheit 2.Roughly chop the cauliflower and add into a food processor to chop it into a finer crumb. If you don’t have a food processor, don’t worry – you can chop it by hand, it just takes a little longer. 3.Grate the cheese and add it to a large mixing bowl with the cauliflower, egg and black pepper. Mix everything well until it starts to feel a little more like a mixture. 4.Lightly grease a muffin tray with some vegetable oil and spoon in around 1 and a half tablespoons of the mixture into each hole. Add the tray into the oven and cook for 15 minutes. 5. Resist the temptation to eat immediately. Cool for a few minutes and enjoy. They are amazing dipped in a chopped chives, crumbled bacon and sour cream mix.
You are going to want to make this ice cream like right now. It seriously tastes like a vanilla shake or a frosty from Wendy’s.
½ cup unsweetened vanilla almond milk ½ cup heavy cream 1 tsp vanilla 2 Tbs sweetener (I use Swerve which is a sugar alcohol so you subtract the carbs from this)
Put these ingredients into a zip lock bag.
Put ice and 6 Tbs kosher salt into a larger bag. Put smaller bag into larger bag. Shake for 10-15 mins.

Guys, this is the best keto Mac and cheese I have ever made. It makes jumping on the wagon so much easier.
Recipe: 16 oz Bag of frozen cauliflower florets 1 cup of heavy cream 2 oz of cream cheese 1 tbsp mustard 2 cups cheddar cheese (I did one cup sharp and one Colby jack) Salt, pepper, and garlic powder to taste.
Steam cauliflower florets until tender In a pan, simmer heavy cream Melt in cream cheese and mustard Stir until creamy. Add 1 ½ cup cheese, stir until melted Mix cheese sauce and cauliflower together. I chopped them into smaller pieces. Sprinkle remaining cheese on top and broil until cheese is golden brown and melty.
