For dressing:
- 2 tablespoons olive oil (30ml)
- 2 tablespoons lemon juice (30ml)
- 1 teaspoon honey or pure maple syrup (5ml)
- 2 teaspoons Dijon mustard (10g)
- ¼ teaspoon fresh peppermint, chopped fine (1g)
- Pinch of sea salt or Himalayan pink salt (2g)
