Straight from Missy's Magic Kitchen, say good morning to the cheeseburger quiche! Ingredients: 2 cups whole leaf fresh #spinach 1/2 lb. ground grass-fed #beef 1/2 cup reduced fat mozzarella 1 tbsp. ground Parmesan 3 egg whites 2 cage-free #eggs Onion powder, garlic powder, salt and pepper to taste Brown ground beef in a skillet, then drain of grease and pat dry. Sauté spinach in a tiny bit of olive oil, then combine ingredients in a pie dish. Bake for 15 minutes at 400*, then for 25 minutes at 350*. This weekend, Missy's Magic Kitchen went Italian with organic meat sauce. Ingredients: 1 lb. extra lean ground turkey 5 cups raw locally grown spinach 1 can organic diced tomatoes 1 tbsp. Italian seasoning 1 tsp. oregano 1 tbsp. onion powder 1 tsp. garlic powder 1 tsp. parsley Pinch of basil Brown the turkey in a skillet with spices. Pour in spinach and diced tomatoes and let simmer. Spinach will cook down. Serve over #zoodles for #paleo and #glutenfree meals, or serve over whole wheat pasta for a natural, nutritious dose of carbs. Fresh from Lily Bear Bakery, it's homemade blueberry banana bread...and it's GOOD for you! 🍌 Ingredients: 2 ripe bananas 3/4 cup organic, natural applesauce 1/2 cup locally produced honey 2 tsp. baking soda 3 egg whites (or 9 tbsp.) 1 tsp. organic cinnamon 2 cups organic whole wheat flour, unbleached 3/4 cup organic dried blueberries, unsweetened Mash bananas. Mix in applesauce, egg whites and honey. Add baking soda, cinnamon, and flour. Stir in blueberries until mixture is thick. Pour into nonstick bread pan and bake at 325* for 60 minutes. The prickly pear! I tried this one for the first time, and--minus the part where its tiny prickly fur got stuck in my knuckle--it was absolutely delicious! Today's lunch/dinner is taco soup fresh from Missy's Magic Kitchen! It's a simple, delicious, one-pot recipe. :) Ingredients: 1 lb. grass-fed organic beef, 96% lean 1 can organic whole kernel corn 1 can organic black beans 1 can organic kidney beans 1 tbsp. onion powder 1 tsp. each paprika, cumin, chili powder, sea salt, and oregano (add more to taste) 1 package fresh organic spinach 1 can organic diced tomatoes First, brown the beef with half of your seasoning mix. Once cooked, drain beef of grease in a colander and pat dry with a paper towel. Pour black beans, tomatoes, corn, kidney beans, beef, spinach, and the rest of the spice mix into a pot and bring to a boil. Stirring occasionally, let simmer for 20 minutes.
