Taylor's behaviour and how that is impacted by her grief and the related responsibility she takes on because of it is something I REALLY hope we get explored more. Both within the comic and within the fandom
I think because she has a very upbeat character and the way that she places other's emotions above herself a lot of the time (which, as OP mentioned, is that emotional labour), people tend to look over her because we don't see a lot about HER specific internal feelings, which I think is SOO interesting with how it speaks about her as a character.
Taylor is one of the few characters other than Ashlyn who actually gets a significant amount of time narrating (meaning, more than the throwaway thought every now and again), and I think its so telling, whether intentional or not, how the significant times the narrative is handed to her to take control (When she's thinking about how Ben is feeling in the arcade episode, When she talks about what Ashlyn was like when they were younger and When she gives the exposition surrounding Tyler after his death) she specifically focuses on OTHER people. Even when discussing their SHARED trauma of losing their dad and their upbringing, she focuses almost entirely on her brothers response and reaction (granted its because at that point the entire narrative is focused on him due to what has just happened, but I think the extent at which she doesn't mention herself is notable even if it was unintentional).
She clearly holds a lot of guilt around how much her brother had to sacrifice for her and their mother, and I think the way she takes on and tries to help other's (particularly emotion-oriented) issues was her way of trying to pay off that debt she feels is owed. I also think the way she helps others through their problems, and consequently drawing attention away from and making her own less relevant, could be a way of her minimizing how much of a burden she feels. By pretending there is no issue (both for herself, and with the way she lies/dodges the truth for her mother), there is less for her brother to feel he has to do.
Both of the twins, but ESPECIALLY Taylor, seem to have the mentality that if they keep their worries to themselves, they either can't develop further or they are less of a burden on others. Personally I think this is why it makes sense that they are viewed as the most socially 'popular' of the group, because it's less likely in a wide group of people that their problems will be brought up or even noticed, meaning the house of cards they have carefully stacked cannot be knocked down. They don't need to explain why their mom keeps mentioning their dad even though he's gone, and by keeping that to themselves they also can keep their mother from falling back into the cycle of grief that caused them BOTH to be parentified so young (both emphasised because while Tyler's is explicitly stated and focused on a lot more, Taylor also had to bear way more responsibility than someone that young should, again going back to that emotional labour, with her at the VERY least feeling responsible for Tyler and her mom's emotional wellbeing).
Taylor Hernandez, in my opinion and despite the mannerisms she portrays most frequently in the comics, is a character deeply rooted in a façade she has built in order to deflect any significant attention away from herself and keep the fragile life her and Tyler have built in the wake of their dad's death stable. This isn't to say I don't think she genuinely enjoys herself when she's with the group because she absolutely does, but I think she is definitely holding in A LOT more responsibility and negative feeling than people tend to talk about specifically to keep her family safe.
