Regarding the Hosea ask, I feel like if Arthur had told anyone about Isaac he would have told Hosea.
Oh I absolutely agree and now all of Hosea's interactions with Jack are even more heartbreaking.
I don't doubt that Hosea would have known Isaac. You can't tell me that if Arthur had come home and told Hosea he had a baby that Hosea wouldn't have asked to meet the baby. Hosea is canonically very fond of kids, as evidenced by his brood of adopted orphans that he lovingly raised and educated and his doting on Jack. There's no way in my mind that Hosea, camp dad and grandpa, wouldn't have wanted to meet Arthur's son.
And I have to imagine he'd try to visit regularly, Isaac probably got excited for Hosea to come and see him because Hosea always brought a book or candy for him.
When Arthur comes home weeping because of Isaac and Eliza's deaths, Hosea was without a doubt the one to sit up with him all night and he probably cried along with him.
And I'm sure that seeing Jack, at nearly the same age Isaac was when he died, being taken captive by the Braithewaites probably brought those memories back up and played a big role in how aggressive and vitriolic he is when he goes to get Jack. In that mission, Hosea is the one busting down doors, going after Catherine (his "boys are off limits" line hurts even more with Isaac in mind) and burning the house to the ground. Hosea was going to do whatever it took to get Jack back safe and sound.
Obviously this is all just headcanon but the loss of Isaac playing a role in his reaction does make sense. He doesn't want his other son to lose a child the way Arthur did and he himself wouldn't want to experience losing another grandchild.

Let’s play a game called Is this cut content or is RDR2 so ridiculously big that I’ve just never seen or heard of this in two years of playing
I doubt anyone is very interested in this but a little update for anyone who might be!: I wonder if this guy originally had something to do with Bayall Edge, because Bayall Edge is actually called serialkiller / shackserialkiller in the files, which a) Is identical to this ped model’s name, and b) Has always been a very odd choice of name for Bayall Edge, given that it doesn’t seem to have anything to do with serial killers. (I’ve seen some people speculate that it’s a cryptic reference to the Strange Man, but I think it makes more sense for cut content to be involved.)
Bayall Edge also seems to have an unused model for a bloody trapdoor in the files – perhaps the cage built underneath was going to play a greater role?
If this is correct, though, I’d be curious to know if Bayall Edge was repurposed for the Strange Man at some point, or if the serial killer was meant to tie in somehow.
